Sorry I put this in the wrong area a moment ago. This should be the appropriate place.
I have a good head start to some armies and builds:
My current armies that I have at least 2000 points in
Space Wolves
Grey Knights
Dark Angels
Space Marines
Eldar
Necrons
Tyranids
Chaos Space Marines and Daemons
Tau
I am looking to either expand or start something new, preferably something not with an evil alignment. I like straight forward armies that are easy to use. Fast and hit hard, are durable and elite. The less complicated the better, basically I don't like messing with phsychic powers that much and I don't like combining too many things to create a powerful combo, but I will ( increased Necrons repair for example is something not too complicated ). I also like to use the same unit over and over, I'll use devastator centurions a lot, like two or three big units of them. I like the wulfen stuff a lot. The dreadknight is one of my all time favorites... I have lots of bikes in dark Angels and space marines... My Eldar force contains lots of wraithguard and a wraithknight. Tyranids I have lots of genestealers and most everything else.
I like low model counts. It's easier to travel with and pack up. I don't care really about objectives, I just want to send out my models to shoot and or crush things in hand to hand. The Legio Custodes look awesome! But don't know a lot about them. I'm coming back after a two year hiatus. So something fast on the board, easy and simple to use, easy to build and paint, elite, tough, and hits hard. Strategy be damned. Thanks in advance.

I would say grey knights fit most of what your looking for. It can be tuff to win objective games with such a low model count but it can be done if the dice/card gods are in your favor.

Tau are the "good" faction of the setting and are quick to assemble and paint. Only Necrons are quicker to paint.
Tau also have without a doubt the best starting boxes out there from awesome start collecting Tau box which is an insanely good deal to the holiday boxed sets. I haven't seen a truly bad Tau boxed set yet. This makes breaking into the army/game easier.
Only the Deathwatch and AdMech/Skitarri box set is better from a pure savings on model wise, but DW are harder to paint than the Tau and the AdMech/Skitarri set needs to books to run the units in the boxed.
Tau don't use psychic powers at all and barely have to know anything about melee. You just need to learn their marker lights and thats it. How to shoot and scoot.
Tau also have a really low model count army option. 3 RIptides and 2 Stormsurges (but people will get mad if you play this since its a powerful list). Any list variation of the bigger Tau suits will be low in model count.
Dewathwatch have a fairly low model count but lots of infantry.
Overall I would say your most suited to Tau and then Necrons.

I know you didn't specify the Deathwatch just mentioning it since it does fit your criteria decently.

Thank you guys. I'll narrow it down to Necrons and Tau. How is that new suit for the the Tau, the one smaller then a riptide but bigger then a broadside suit. Also how is the stormsurge, the big BIG monstrous creature suit?

The mid sized suit is the XV95 Ghostkeel and its a solid mid tier unit to make good casual armies that won't pull out hair. If your going going for min max and want to win tournament it won't be able to perform with the best of the codex. Still a solid B+ unit. When taken with the Optimized Stealth Cadre it can be a potent unit. Depending on your army the Ghostkeel Wing might be superior since it would give cover to non-stealth units.
KV 128 Stormsurge is currently one of the stronger units in the game and is definitely one of the stand out premier A+ Tau units. It has never been in a list that has actually won a tournament though. Top 16 and one a little higher but no list to crack the top 10 with a SS. The SS army tends to have problems with objective secured style of gameplay since there are so few units in your army. If you can't shoot them off odds are they will win objectives. With only a single stormsurge they are honestly not that great. If you want to take one take two since they work better in pairs, but if your just making a semi-casual list then one should do fine. A singles stormsurge is not all that strong and has some serious weaknesses with the low amount of wounds. The top Tau list currently doesn't use any of the big suits. No Riptides, Y;vahrah (forgeworld), ghostkeels, or stormsurge. Monster Tau became so popular people always expect that and have lists geared around taking them out. So sometimes going anti-meta can actually be stronger. If winning tournaments is a big concern.
The only must stay away unit in the codex is Vespids, the tau codex flyers, and barring niche uses the Heavy Rail Rifle Broadside (but not the High Yield Missile Broadside).Sniper Drone Teams aren't that great either since we have so many ways to get str 5 ap 5 shots, but they aren't hands down the worse choice either.

I'm a casual player and don't intend on entering and playing anything serious. The imperial knight army seems fun for me but probably not my friends haha. One knight wouldn't be bad though.
What really has caught my eye is the Legio Custodes and that new contemptor dreadnought from forge world. I've never ordered anything from FW, but I would for this! What book do I need to buy? I think I'd rather make a Legio Custodes army, although they look slow...
