If you have a Dark Angels army, and all your troops are part of the 3rd company (for example), would your Company Master have to be Master Astoran? Or are there multiple Company Masters within a company, or is Astoran considered something above Company Master?
I'd like to keep my army fluff-friendly, so I'm just curious.

A Company Master would likely be "the" Company Master, but there's no saying someone wouldn't step in to cover him while he's away, etc. Or maybe in your timeline, he's ill, sick or dead...or has been promoted.

Would a Dark Angels army be one company, or would it be multiple companies together, therefore possibly having two company masters.

It sounds a fudge but it could also be a company master and a acting company master, a promising marine from deathwing with potential to one day be the grand master , who is under a veteran tuterlidge and guidance in regards to command and captaincy.
A kind of extremely advanced aprentrtship under a senior company master who is there to guide, and to grow the acting master into a potential grand master. They where chosen,a and puller out to be given a chance in which to excel.

The Acting-Master solution is good. They wouldn't be a full Company Master as per lore, but for gameplay, you can assume that they're strong enough, hence their psuedo-apprenticeship.
However, as official Company Masters go, there's just the one. But you could go with the Acting-Master, or do a different point in time.

They would be just as combat capable being a deathwing member formaly. There already one of elite.
The extra training would more be there being skilled in command, control and the finer arts of being a captain, and taking command under supervision of a veteran officer.
And when ready and a vacancy opens up they are promoted from acting, to full rank.

The battle brothers will generally be from a single company, but the Second Company (Ravenwing), First Company (Deathwing), and Tenth Company (Scouts) often deploy with other companies for specific missions. Since we know who the company masters of the Ravenwing and Deathwing are, you could have the company master of the tenth along on a mission. Or as others have said, Company masters are pulled from the best of the deathwing, so a Captain statline in terminator armor works great as someone being groomed as a future company master.

also while it;s unuseal for captains to deploy together in the field, it is ALSO unusal for a Librarian to deploy into combat leading 2 squads of scouts, and a buncha grav centurions, etc. an aweful lot of typical CAD deployments are somewhat unusal. (this BTW is why I LOVE the concept of formations. a formation will, ideally, be a very typical example of a factions deployment

It's entirely possible - larger actions sometimes see more than one company committed. It's also possible the Masters of the 3rd and 7th companies were meeting for a discussion along with their bodyguards when they position was suddenly attacked.
It's also Dark Angels, so the official structure that's reported to the Inquisition and High Lords of Terra may differ from what's actually in the field.
