Does anyone know if AOS can be played as a skirmish size game? Initially, I thought that it was but everything that I read talks about armies of 1k to 2k points with a large(ish) model count. Could anyone direct me in the right direction? Thanks!

You have two options:
a) Play levels of 500pts. Here you're looking at relatively few models. Ironjaws can have, at most 21 models and have as few (within reason) as a dozen. Some armies are a bit more horde oriented but even at the 500pts mark they won't have much in terms of bodies.
b) Play the hinterlands, a fan-made mordheim-esque system. Just gimme a second and I'll give it to you.

Or why not just use the Warhammer World Regiment of Renown rules pack.

AoS is by definition skirmish (single model activations), so you can play it as a skirmish game indeed

Hey OP, I am the person who wrote the 'Hinterlands' rules, and I would be thrilled if you gave it a chance. It has it's own dedicated thread on here if you want to read a bit more discussion about it:
http://www.dakkadakka.com/dakkaforum/posts/list/706704.page
And here's a screenshot of the book itself:
I have been very fortunate that it has been very well received. It is the most popular download on TGA at 475 downloads (almost double #2). It is also picking up steam and has some exciting updates planned:

If you give it a shot, let me know what you think.
Many thanks!

I can also back up the Hinterlands as well. Fantastic professional quality for the rules, a rule system that actually works quite well, and I think a much better way to play than "oh, choose say 400 points of guys and play normally". Well worth the try IMO.

Hinterlands looks good to me, tho i haven;t had a chance to go through it.
I have been mixing the regiments of renown rulepack with a striped down path to glory system from the generals handbook.
(instead of a 100 point limit i've been uping it to 200 and allowing 50% to be spent on one unit with a hero key word. They can keep one hero ability if they have any and the rest have to be earned through the games. )
The scenarios from the storm of sigmar box aren't a bad way to go either.
