I know you can make a full squad with Nemesis Daemon Hammers, but without the Storm Shield, they seem to be a bit vulnerable when compared to Assault Terminators. Is there any way to set up a Grey Knights Paladin/Terminator squad to be the equivalent of a Space Marine Assault Terminator Squad with Thunder Hammers and Storm Shields?

As far as I know, nope. In fact I think Draigo is the only Grey Knight that can have a Storm Shield (which is weird, since knights are suppose to be known for swords and shields).
It use to be possible when they were in Daemonhunters (although storm shields sucked back then), but was removed in 5th edition.

Attach Saint celestine to a paladin squad. You then have an item to tank for the Terminators.

Nope. Try taking a Golden Legion of Custodes with the Grey Knights though. Hammerhand lets them hit at S7 behind those shields. Kinda fits the bill.

No, and you shouldn't try.
Well you could theoretically get lucky enough to roll the Forwarning psychic power, which gives a 4+ invuln to the target unit, and then also stack this with Sanctuary to get 3+ invulns on a squad. but thats not going to happen often.
Grey Knight terminators should never EVER be used as an anvil like a squad of TH/SS terminators. GK terminator squads, and indeed all GK units in the overall playstyle, should focus on scalping out the threats to the enemy. Mostly with shooting. Use Gate of Infinity to retreat away from anything that you would normally need 3+ invulns to withstand.

Ah, the good old days. Back when Stormshields gave a 4++ in close combat only and only against a single enemy model.

I'd like to see Grey Knight Paladins retweeked a bit to make them more akin to grey knight hammernators. give them a sword stormbolter and storm sheild. 1 man per squad may take a deamon hammer.

Grey Knight Terminators are the GK version of Tactical Marines.
Strike Squads are Scout equivalents.
Paladins are Veterans.
Purgators are Devastator-Lite.
Purifiers are ... odd. They are a Assault Devastators.
Interceptors are not Assault Marines. DreadKnights are GK Assault Marines. Interceptors are kind of like Bike Scouts, but with Jump Packs instead of Bikes.
