More specifically, which attacks can he make in a single round. Seems like the mega boss can attack with both weapons he's armed with, the maw crusher can only use one of its attacks? For instance if he uses his destructive bulk he cannon attack with his fists or tail, correct? Is it only allowed to attack with one its its profiles per combat phase?

From the Age of Sigmar Rules (Combat Phase; page 3):

Step 2: Each model in the unit attacks with all of the melee weapons it is armed with (see Attacking).

So its able to attack with all of its attacks even though it states on its page "The Maw-krusha can batter opponents with its mighty fists, flatten them with its destructive bulk, OR smash them with is bladed tail."

Just confused on the wording I guess.

A legitimate issue, especially considering how GW is trying to get better at wording things more clearly on how it is intended to work. Other have answered it; yes, you would make all the tail and fist attacks.

Consider the fact how the Destructive Bulk rule works - it isn't actually a melee attack, but rather an effect that is activated upon a met condition. The description is just that, a description, listing what its options and equipment are, not necessarily how it all works together.

On a successful Charge, the Maw-krusha uses its Destructive Bulk ability to inflict damage. If there are any target models left, then it gets to attack with its Mighty Fists and Bladed Tail in addition to the Megaboss's own attacks (as per the rules already quoted in this thread).
