How hard is it to remove pages from the codexs I wish to make one book for all the rules rather than 3 books (codex index and FW)

depends on whether or not you want the rest of the book to be intact. If you have a steady hand and a sharp knife you can probably get most of the pages out painlessly, but the book will pretty much be a hollow shell afterwards.

Several stores like Staples (I think?) have the ability to slice the spine off a book for you.

If you've not bought the books yet, it might be easier to use the Epubs rather than butcher a physical book. Otherwise, finding a place to spiral bind your books and mix and match the pages you want should be the best.
