Does anyone know how to create massive capes for knights? I have a cerastus Knight I want to add a cape to, but I have no way to do it. Does anyone know how to sculpt or buy a cape that will fit a knight?

As far as sculpting one goes, I imagine it would be much the same as sculpting a smaller cape, although you might have to provide it with some kind of structure with plastic card or some kind of armature.
A couple of ideas come to mind:
Plan out how you want the cape to look and then cut out some pieces of thin plastic card to sketch out the shape. You would probably at least want a piece of plastic card reinforcing any large, flat surface. Then fill in the gaps and cover the whole thing in green stuff.
Alternatively, you could try to rough out the shape using some kind of wire mesh like chicken wire or drywall patching mesh. This would allow you to bend it and get the exact shape you wanted. Then cover in green stuff as before.

I'd use a single sheet of fairly thick plastic cut to a cloak shape and then a heat gun to form it.

Another note: Once you've decided on the structure of your cape you can use the plastic card/wire mesh you've prepared and use it as a template. Trace the dimensions out and then when you're ready to use green stuff just make a big flat sheet of it and cut it down to the template, then transfer it onto your armature.

Ok. I'm running short on green stuff and I have no way of getting more haha. I'll wait abbot and see if I can make another trip to the states to avoid buying GW's overpriced GS.

If you have access to a heat gun you could bend poly styrine to make the bulk of it. edit bleh didnt even see winters response. you could possibly do it too with some woven fabric and pva. though not sure how to deal with the fraying edges.

You might find a handkerchief or a pocketsquare that is the exact size you need.
its up to you if you want it to be stiff or free flowing.

These are my opinions. This is how I feel. Others may feel differently. This needs to be stated for some reason.
