For general use as the anti-tank tank that it is, should I kit this thing out with the optional weapons? Sitting at 125 points which for a tank is QUITE cheap, it rocks a single d3 (d6 on larger infantary mobs) gun that is essentially a melta. Should I opt to give it the havoc launcher and/or combi weapon? And if so, what combi is the best for it? Melta to double up on anti-tank, or bolter for some dakka against infantry?

Opt to bring a different tank instead. Short range means it has to move. giving it a -1 to hit plus low number of shots.
If you want anti-tank bring a Predator. For 15 points more you get double the range for the same average amount of shots.

The Vindicator hasn't brought me much luck, in all honesty.
If you're looking to bust tanks, I'd recommend a Sicaran or some Razorbacks with Lascannons.

Disclaimer: I run two Chaos Vindicators with combi-flamers and havoc launchers.
That said, the extra weapons aren't really worth it. I only use the tanks in casual or narrative games (Predators do any actual work I need to get done), but I do find that rushing them up the table, guns blazing, makes them a decent distraction carnifex. With T8, they're rather durable, and you can use them to soak overwatch fire or just whittle stuff down.
Vindicators should NEVER be used for anti-tank. The demolisher cannon is very much unsuited for that kind of work in 8th Ed.

Vindicator is mostly trash this edition. if it had been 2D3 (2D6 against units of 10+) I could see it have being more useful.
It doesn't fulfil the same role it used to be as a horde clearer, not even close. Although for Chaos, it is one of the few S10 weapons they have access to so it can have some uses if you're going non-competitive

I've only run my vindicator once so far and it didn't do anything. Got blown away on my opponents first turn. However, I run mine with just a havoc. Because I like them. They seem decent against groups of dudes.

Important factor about the vidicator is that it is T8. Being t8 and only 125 points. It's probably the best costed tank marines have access too. I see no reason not to give it an additional combi bolter (it is well priced). I ran an army with 3 vidicators leading the charge following guilliman (any reroll hit buffer would work in this case) and the combination of t8 making them tough plus their damage was really impressive. I'd say the biggest bummer about the vindi cannon is that it's only AP -3 (so most tanks are getting a save) It should be AP-5 - it's lobbing a giant shell - army should have no effect against it.

I definitely do not hate my Vindicators. In fact, I rather like them. They're cheap and they can really crush tough targets.
I play Space Marines so I don't have access to all of the fancy extra weapons that the traitors have, but I'm usually happy just fielding them stock. Two Vindicators is definitely more than twice as good as one - advance them as a pair and focus on one target until it is dead. As their attacks are high Strength and high value they really benefit from anything that lets them reroll wounds.

A Vindicator with combi-bolter for 127 pts is solid.
(The combi-bolter is the only optional weapon I'd give it. It usually wants to stand still so the combi-melta/flamer is out, I don't like combi-plasma on a tank and the havoc launcher is overpriced.)
Yes it usually fires very few shots, and it might be destroyed early on, but again, it's only 127 points - for a T8 tank with a S10 D: D6 gun!
