I love the look and style of Breachers. High risk/High reward tau are my favorite, and I really hope that they improve ruleswise with the codex.
Just 2 or D3 damage instead of 1 on their super short range profile would do it IMO.

Shadowsun is my waifu both in lore and in model. She wears the best Tau armour, and does it with style. And I love how in his lore she tricks space marines, but not in a " lol sm so stupid i'll win because its my book" way, but using space marine tactics and traits agaisnt themselves. I love breachers too. And I actually thing they are fine as they are. I think they just need Devilfish to be made cheaper and better, and theyll shine.

I'm not the biggest Tau fan, but I do like the Fire Warrior models.
Their big shoulder pad on one arm forming a sort of shield is a cool idea and I like how alien their one eyed space hats look.
I don't know if they count, but the Kroot are some of my favourite GW models ever!

Ghostkeels, Love the lore and fluff around them.
Keep them secret for as long as possible despite them apparently operating on the front lines for a long time then suddenly reveal them to boost morale in a "Just as Planned" manner when the next phase expansion hits. That, and the fact that the pilots effectively shun their own kind in favour of their suit and drone AI.

I'll second breachers. Love the models and the concept.
I also love small skimmers, like piranhas and tetras.
Kroots are also a favorite, but I don't think they look so good in a tau army. It's a matter of visual consistency to me. They look too different. I would love to see more kroot models, but either with enough models to be fielded on their own, or with bits that make them look more tauish (hard to pull-off without betraying the initial models).

I've always thought the very subtle Ashigaru vibe (in terms of firing stance, the general shape of the helmet, and the shoulderpad slightly inspired by the woven firing shields used by Matchlock ashigaru units) of the fire warriors was a very cool thing. Despite the "muh anime doesnt fit in 40k" whining surrounding the Tau, Fire Warriors at the very least have a much more interesting "fantasy/history in space" vibe to them than a lot of the more medieval looking marine chapters that just kind of scream " WE'RE LIKE KNIGHTS IN SPACE! GET IT? GET IT???" The tau style of hordes of peasant warriors backed up by the suits taking the role of elite specialized "samurai" is pretty nifty.
The only reason I don't like basic Strike Team fire warriors is their on-board playstyle of the static gunline, which is why my Tau are going to be close ranged.

The crisis suit is my favourite Tau unit. And the new crisis commander kit is the absolute, no exaggeration, perfect representation of it.
Big, spindly, full of options, and every joint has an easy to remove guide clip that you can snip off and make the mini completely poseable.

Crisis Suits. Easily Crisis Suits. Even the idea of them is quite cool to me, in the way the Tau approach the issue. Rather than simply enhancing their strength and toughness the way the Imperium would, they put effort into making them fast.
The mental image of a bunch of big, surprisingly agile and fast suits darting around there battlefield sending down torrents of fire is really fun to me. They used to have a really fun, fluffy playstyle, too. Their short ranged weapons forcing them to dance around the enemies charge range.
Unfortunately they lost nearly all of their mobility in 8th edition, without any increase in range. Which given the increased mobility in a lot of CC units, means they generally have one turn to do something before being erased.
So, rule wise I have to say they're not my favorite anymore. That'd probably go to Stealth Suits, which are also quite cool looking. The combination of -1 to hit, good armor and 2 wounds means they take a surprising amount of effort to shift if you get them into cover, unless your opponent has smite.

Farsight is probably my favorite Tau character. I loved the mystery surrounding him when I first got into the game back in 4th edition; you didn't really know if he was still loyal to the Empire, if he'd simply gone rogue, or even if he had been corrupted by Chaos (or possibly some kind of Necron influence?). That and I'm pretty sure he was meant to be a not-so-subtle Gundam reference (Char) with his red suit.
Of course they've gone and ruined all that mystery now. I still kinda like him though. The model is really nice too, just a shame it's Finecast.
Other than that it would probably be easier for me to list off the models I don't like. Not a fan of the plastic flyer (should have just released the barracuda in plastic), not a fan of the riptide or any of the bigger suits or their FW variants (the ghostkeel is okay though, I guess), other than that I kinda like everything and want more. I still think fire warriors are some of, if not the best-looking troops in the entire game, and the hammerhead is probably my favorite sci-fi tank design ever.

The only good xeno is a dead xeno! Would you like to know more?
In all seriousness, I preferred the old Broadside to the new one. The new look just doesn't do it, and looks really stupid even by 40k standards. It's very high on my list of "models that I hate", which is disappointing because I did like the old Broadside.
I don't like the big suits, the little suits are okay, and the tanks and fire warriors and drones are pretty good models. The general armor appearance doesn't do it for me, but I like the look of the railcannons.

I do think the old broadside had a better silhouette. Shoulder-mounted railguns is a cooler look in my opinion, but the guy that sculpted the new one, if I'm not mistaken, converted his own suits to hold the railguns instead, so when he got hired by GW to sculpt official Tau models I guess he felt like forcing us all to go with the same look. If it were me I'd have designed the kit to allow both options, but whatever I guess.

Fire Warriors are what got me interested in the Tau and their probably one of my favorite base infantry in the game/fluff. Their armor design is very iconic for the Tau (despite it probably being lifted from other media) and does a good job of being technological, semi practical (a rarity for 40k), and alien like (alien to the rest of the 40k factions at least). I also like the Breacher and Pathfinder armor variant.
I also like the Tau suits and vehicles with the XV8 and Hammerhead being the best of the lot but its their infantry that resonate the most with me.
