When using multiple weapons do I roll for each different weapon type separately so say I was charging with a chain sword a grav hammer and power sword would I need to roll separately for each or roll all together and use the highest ap out of all the weapons

"If a model has more than one melee weapon, choose which it will use before rolling the dice. If a model has more than one melee weapon and can make several close combat attacks, it can split its attacks between these weapons however you wish – declare how you will divide the attacks before any dice are rolled."

Your model have a certain amout of attacks. You can use any attack for any one weapon. For example if your marine captain has a power sword, power fist and 4 attacks on his profile: he could use 2 attacks with the fist and 2 with his sword. Or he could use all 4 attacks with the sword. Etc..

"The rules for resolving attacks have been written assuming you will make them one at a time. However, it is possible to speed up your battles by rolling the dice for similar attacks together. In order to make several attacks at once, all of the attacks must have the same Ballistic Skill (if it’s a shooting attack) or the same Weapon Skill (if it’s a close combat attack). They must also have the same Strength, Armour Penetration and Damage characteristics, and they must be directed at the same unit."

As each weapon has its own profile yes you should roll them separately. You can roll them together if you use coloured dice so that each weapon is a different colour - confirming with your opponent which colour dice are which weapon BEFORE you roll not after.

For instance:
I have a Storm Guardian squad (I don't, but I should). I've armed it with:
2xPower Sword (Index option)
2xFlamer (Burn, you stinkin, smelly sea slime!)
2xChainswords (simply better than Blades, no points difference)
4xAeldari Blades (worse, but they look better)

I charge some 'Boyz squads.
I decide to roll the Chainswords first - 3 attacks each, or 6 attacks. MIght as well also roll the 2 Flamer dudes with them - different weapon, but same profile (S3 AP-) - 2 attacks each. I roll 8 S3 AP- attacks.
Then I do my Aeldari Blades next - they reroll 1s to hit (on A:2 models...), so I can't roll them with the Chainswords/unarmed guys - another 8 attacks. Still S3 AP-
Finally, I get to my powerswords. And now I roll them, because they're still S3 but have higher AP.

I could have rolled one model at a time, it tends to be faster to group them. Even faster if you have colored dice to differentiate.

Different armies are likely to have different guidelines here. Tau aren't going to need different attacks between members in a squad. SM and CWE are sometimes going to have Sarges/Exarchs with different attacks, but otherwise rarely vary. CSM will vary a bit more.

If you're ever confused, remember that you can roll one guy at a time, and one attack at a time, if you wish. Then just roll it up/combine rolls as makes sense for the same outcome.
