This is a bit random but why is this piece in the sprue. It fits nowhere as far as I can tell, and it isn't even mentioned in the instructions, so what does it do. Am I missing something?

Is it for making a Basilisk?
Specifically the plate which sits beneath the rear platform.

It's for the Basilisk.
The Basilisk doesn't come with instructions, leading to many being built incorrectly. However:
1: the extension of the bottom floor with the hooks doesn't go on the Basilisk so the bottom is shorter.
2: the gun deck goes in the middle slot
3: the piece shown is angled, and connects from the bottom of the tank to the bottom of the gun deck
4: there are 2 decorative struts that attach to the angled piece and give the appearance of supporting the gun deck.
They Wyvern and Manticore do not use the piece, so it's just for Basilisks.

Guardsmen, hear me! Cadia may lie in ruin, but her proud people do not! For each brother and sister who gave their lives to Him as martyrs, we will reap a vengeance fiftyfold! Cadia may be no more, but will never be forgotten; our foes shall tremble in fear at the name, for their doom shall come from the barrels of Cadian guns, fired by Cadian hands! Forward, for vengeance and retribution, in His name and the names of our fallen comrades! |

Thanks. But I still don't get why it comes with the wyvern, which does have instructions, and the chimera which shouldn't need it.

It goes underneath the gun platform at the back, doesn't it?
Or at leastg, it used to in 2nd edition when the Chimera, Griffon and basilisk were designed. The Manticore and Hydra (and Medusa and Deathstrike) have a different design at that location, so don't need that part - they use the longer piece with the hinge brackets for the Chimera rear ramp instead.
It comes with the Chimera and Manticore simply because it's inclluded on a sprue that both those kits need. There's no room on the other sprues specific to those kits, and it's clearly not worth recutting those sprues to get rid of it.

Unless I'm mistaken, the basilisk sprue was designed for the old chimera hull and this piece covers a gap that's introduced when used on the more recent chimera kit.
Else the old chimera kit had a comparable panel for the same reason.
Same reason the basilisk comes with a complete tank upgrade sprue.

I ended up using it as a partial track cover, seemed like the only thing that it could be used for.

I can tell you right now that no, it doesn't cover the gap that's introduced.
The Basilisk comes with the tank upgrade sprue because the Chimera sprue that is included does not have the Hull Mounted weapons.

Thanks. But I still don't get why it comes with the wyvern, which does have instructions, and the chimera which shouldn't need it.
Because it's on the Chimera chassis sprue.
The Basilisk, Manticore, Wyvern, and Chimera all share a set of chassis sprues, with a unique sprue for the upper assembly. That piece is on the chassis sprue.
