Seeing as the 2 choices for humans in 40k seem to be abject service to the god-emperor and kill everything else or abject service to the chaos gods and kil leverything els,e are there any humans who took a middle ground and joined the T'au?

I've not seen any fluff or images implying that there are, but it seems a logical approach that if a mining colony with minimal imperial affiliations (aside from an occasional inquisitorial visit and the subsequent purge) would agree to join the greater good. Has this happened?

Yes - Gue'vesa Auxiliaries are humans who fight alongside T'au.

This was the catalyst for the entire Damocles Crusade: Imperial colonies on the edge of Tau space being convinced to willingly join the Tau, and promptly ended up fighting against the inevitable Imperial reconquest that followed alongside mainline Fire Caste forces.

I think even foreshadowed in the OP the answer is no. There are lots of human pdf armies in the Tau empire. The tau don’t really seem to put them on ships and deploy them to fight in their armies though.

There were rules in a chapter approved for a tau guardsman squad about fifteen years ago but they were pretty thrown together and the little background they had was that they’re local militia.

There were official rules in one of the Forge World books. I wish they would republish them for 8th edition. I would love to buy some guardsmen and add them to my T'au army.
