Is there a small piece of fluff that you personally love, but is overlooked by bigger, more "important' pieces of 40k?
Gotta say, hair squigs are hilarious, and would love to see an ork or two fall into a pit of them, making them essentially a Sasquatch or Bigfoot looking characters.

I love the old necron lore, but that was overwritten by the need for a more interesting army on the battlefield (good for the game, but I loved the old fluff!)
I also love the fluff for the deathstrike, possibly from an older codex. t went along the lines of:
"at one point the orks had managed to successfully loot a deathstrike missile launcher, and used it to deadly effect against the umpteenth armoured legion, the first and eighth regiments and some 400 surprised orks".
Also the lost waaagh! is one of my favourite little whimsies in the 40k ork fluff, which explains how a warboss launches into the warp to find stuff to krump, arrives in the same place shortly before he left, and kills his past self, reasoning that he can have a spare of his favourite shoota. The resulting confusion stopped the WAAAGH! in its tracks."
That final sentence is just a peach.

I enjoy Cain and Amberely talking about the nice normal things in life....
Amberely remembering fondly her childs primer with the burning and tortured heretics.
Cain watching the truck of convicts draw up at the schola to deliver them for live fire exercises for the students
and they are nice stable people by the standards of 40k.

Guilliman being unable to pick up a pen in his armour, and making a joke about how that is his worst enemy. Sicarius is nearby, and asks Guilliman if he's being serious.
Guilliman's reaction is excellent.

You can't just not say it.
Despite hating their lore my favourite is the Ynnari. The Visarch gets trapped in the Garden of Nurgle with Daemons closing in and just goes "This is fine".
