Question: Can I use stratagem Rolling Death from PA Greater Good stating:

Use this Stratagem in your Shooting phase, when a
TAUROX model from your army is chosen to shoot
with. Until the end of that phase, when resolving
an attack made by that model, if that model
moved less than half its Move characteristic in the
preceding Movement phase, add 1 to the hit roll.

on Taurrox Prime. Taurox Prime is obviously Taurox but on datacrd it has following keywords: VEHICLE, TRANSPORT, TAUROX PRIME

You cannot. TAUROX PRIME is not the same keyword as TAUROX, much the same way as GENESTEALER CULTS is not the same keyword as GENESTEALER; or CHAOS SPAWN is not the same keyword as CHAOS.

Keep in mind that normal Taurox are used by any regiment, while Taurox Prime's are exclusive to the Militarum Tempesus, have different weaponry, and a better BS. It makes sense that the stratagem wouldn't be able to affect the up-gunned Taurox Prime.

Rules wise they're not the same thing. Using the 'Rolling Death' stratagem as an example, if it said "when a Taurox from your army..." it would be referring to a specific datasheet (i.e., the Taurox datasheet on page 115 of Codex Astra Militarum) and not any datasheet that happened to have 'Taurox' in it's name.

As noted by other a Taurox and Taurox Prime are two different keywords. They are also a perfect example on why GW should never use multiple word keywords. There would be no question if the keyword was Taurox-Prime.

There's no confusion when there's commas between the keywords...

Unless they forgot a comma.

And what pray tell would the PRIME keyword be for?

For anything called PRIME, and not V2 (version 2) or V3 etc.

The point being, it is far to easy for people to get confused when part of one keyword is a different keyword.

And some people will be confused even if GW were to write the perfect rule set. Hyphenation isn't any better or worse than commas. They're both punctuation marks.

If anything I think it would be better if all keywords were surrounded by ⟨Chevrons⟩ rather than relying on formatting (as GW have often forgotten to format keywords correctly) with replaceable keywords in ⟨⟨Double Chevrons⟩⟩, or 「Corner Brackets」 would work well too.

Anyway, slightly off track, OP is answered, the Stratagem doesn't work with TAUROX PRIME.

But hyphens turn two words into one word, just avoid the confusion of the two words being separate keywords.

Alright, let's apply that logic to something else...

Chocolate Milk is not quite the same thing as Milk - one has something added to it to make it a different beverage - oh sure it started out as Milk, just like how the Taurox Prime has had additional things added to it over the regular Taurox.

There, I have now managed to turn 40k into real life. Bow down and worship me.

I will not rest until the Tabletop Imperial Guard has been reduced to complete mediocrity. This is completely reflected in the lore.
