Apologies if this has been answered elsewhere here or in an FAQ.

Say a unit starts its move in a piece of terrain with the 'difficult ground' key word. It then uses its move and/or advance to leave that terrain piece and enters or crosses over another piece which also has difficult ground. Would it suffer the minus 2 to its movement once or twice?

I would say it applies twice.

If a unit makes a Normal Move, Advances, Falls Back or it makes a charge move, and any of its models wish to move over any part of this terrain feature, subtract 2" from the maximum distance that every model in that unit can move (to a minimum of 0), even if every part of this terrain feature is 1" or less in height. This penalty does not apply if every model in the moving unit can FLY.
Emphasis mine. Each individual terrain piece inflicts the penalty if you move over "thus terrain feature", so both will trigger.

RAW says yes. Difficult terrain says “this terrain feature”, so each different I difficult terrain piece you cross cost 2” of movement.

Two fuel pipes can stop an imperial knight dead in its tracks. A huge warmachine, with powerful guns, protected by ion shields, able to fight anything, can hardly move over fuel pipes and cant end its movement on op of those, he would fall over, impossible to balance.
