So, as the title says, I've been away from the hobby for a long time. I played Space Marines when I was younger, maybe seven years ago, and I also collected T'au for a little while. However, due to the circumstances of the time, I stopped playing. Now I'm ready to return to the hobby, mostly as a result of having the time to do so but also because the lore has attracted my attention once more.
I'm looking for advice on the armies available to a player of the hobby. Although I've had a browse through the product lines on the GW website, the range of options is quite overwhelming. So, I'm looking for information on lore and playstyles for each of the armies, so I can make a more informed decision. Of course, the aesthetic of the models is important, and I'll take this into consideration as well, but most important to me is the playstyle - I'd like a army that I enjoy playing, not one that's a bore.
If anybody can provide me with the information I seek, I would be eternally grateful. If any more info is required, let me know.

Welcome aboard (and back!)
The Tactics sub-forum has some threads that describe the options/strengths and weaknesses of the various factions. Some of those threads can be daunting, but the first page occasionally has a guide.
Its a great time to start playing Space Marines. Assembling a 500 point Space Marine Combat Patrol is not a huge hurdle in terms of money and painting time. There are some Combat Patrol boxes that vary in value but are not a terrible place to start. I play mostly Dark Angels myself, so I am biased!
Tau are not in a great place right now.
Looking at other armies, Necrons are also looking healthy and have a new range of models and a good Codex. If you pick up one of the Starter Sets you get the core of both a Necron and a Space Marine force plus the basic rules.

Marines will give you the most straightforward playstyle for sure.
I would actually suggest Genestealer Cults as a difficult to pilot army that can be quite dynamic, BUT they are struggling a bit at the moment. If you like being the underdog these might be a good choice especially with the ace models ( though some are really hard to get a hold of for cheap ).
Of the newer books - Deathguard has a ton of choice. DA has an interesting combined arms offering. Necrons are overall good and I have quite a lot of fun playing them currently ( and they're cheap to get into at the moment ).
The Dark Eldar book is also due soon so they may have something of interest if you linger a bit longer.

All the new 9th ed armies have good set of rules and seemed to be fun to play. Aside of that armies like custodes, harlequins or demons can build good or even very powerful lists.
Stuff like tau or imperial knights is better avoided for now. Unless of course you are willing to roll the dice, expecting them to get good with a 9th ed book and for the mean time be busy with painting the army up.

It's hard to go "wrong" with space marines, as the different chapters allow such different ways to play. Anything from full gunline to full assault, or full armor or full infantry, or all dreads, or full terminators or full bikes, etc etc.
I would personally skip Tau until the book comes out. Even longtime Tau players are avoiding them, as not only are they just *bad* right now, but they have a very un-fun playstyle and the rules practically work against you scoring objectives.
If you're looking for something kind of fresh, go for Necrons or Death Guard, or maybe even Drukhari--they're due next and if DG and Necrons are anything to go by, they could have some interesting stuff in their new codex. Basically anything so far with a 9th edition codex has lots of interesting stratagems and interactions to play with.

First, a word of caution, you will find a lot of people whining about SM being broken. This is in general not true, SM are strong but pretty balanced army (save for a few wombo combos like new Dark Angel rules) that can do a lot of playstyles. There is just a lot of  because their 9th edition book was released in late 8th and was (on paper) really good - on paper, because thanks to Covid not a lot of games were played and as soon as real tournaments restarted SM were shown to not even be in top 3 of the best armies.
Second, if you want entry to hobby now, I would advise you to not wait too long, current Start Collecting boxes (pretty good value) are being replaced with Combat Patrol boxes (much worse one) as 9th edition books are being released. Space Marine ones were already replaced, though there are two SM start collecting box left (squats/vanguard) and they are in new "starters" (primaris+necrons). Next one to vanish will be probably Dark Eldar one.
As for the armies, it really depends. What playstyle you like the most? Like I said, SM can do a lot of these, Custodes and DG too to a lesser degree, Eldar of various kinds will probably be really reshuffled by their new books so hard to say now, Sisters of Battle and Mechanicus are probably best choice when doing semi-horde army supported by tough elites and various vehicles, if you want real horde, your best bet is probably Orks/ IG.

Agree with pretty much everything Daed has said with extra emphasis on the Genestealer Cults being hard mode. 9th ed essentially broke the way they function and they are in a really bad way right now. Great models though, and they WILL eventually get a codex.
Marines have never had more options than they do right now, and they are pretty well balanced against the other 9th ed books (their previous codex was ... ahem ... problematic). You will see haters, and you will see people claiming it's because they're op, but it's really just because we're now wrapping up a 2+ year release cycle and there's just some fatigue. Now is probably one of the best times to be playing the army. Especially if you like the Primaris stuff.
What specific play style are you looking for? We can probably make a better recommendation if we know what you consider to be fun.

Note: Reality disagrees with Irbis on this.
9th ed was released in late July 2020 with the Indomitus launch box. The 9th ed SM codex was released in early Oct. 2020.

What kind of style do you prefer though? You haven't mentioned it. Tau and SM are very different from what they used to be several editions ago.
Do you prefer shooting oriented armies, melee ones or a mix of both? Strong psykers? Mobile armies, lots of vehicles, elite oriented armies, forces lead by a superhero, hordes or a mix of some of those archetypes? Armies with great offensive abilities or focussed on staying power? Armies that are focussed on scoring or killing? etc...

Buy some books, buy some models to paint/collect, don't bother with the complete mess that the rules are. Enjoy 40k as a setting, but there's nothing in the game that is worth coming back to.

I suppose I don't really have a preferred playstyle. I'm open to try anything, though I'd rather not play T'au again. At the moment I'm leaning towards Blood Angels or Daemons, the former because I like the lore and the look of the models, and the latter because I think it would be wildly different from anything I've used in the past.
