Is there a place where I can see witch stormcast have what keyword? There are so many warscroll in that book. I do not have the app.

I'm not aware of a table of keywords as such, if that's what you're after.
If you don't want to use the official app, you could try Battlescribe.

For isntance units with the Holy Command: Thundebrolt Volley. It affects Justicar or Angelos units. Another one returned very spesific models back from the dead.
The Knight Excelsiors make a lot of the fat dudes battleline.
Is there some method to the madnes? Like fat dude = Paladin keyword.

Yeah basically. Paladins are the heavy infantry of stormcast. Justicar are archers. Redeemer are standard melee infantry. Once you get used to the patterns it's not too bad.
Still exceptions that can trip you up though. Evocators don't have the Paladin keyword for example, when they feel like they should be Paladins but it's understandable not making them Battleline for Knights Excelsior I guess.

What is the pattern? Are the lightning one every unit that came out in 3rd edition? Are the castigators eveyr 2nd edition model? It is not inuetive at all.

Well no its not intuitive, but there is some logic to it. You just have to learn the pattern through reading the sheets is what I mean.
Thunderstrike Brotherhood covers most (all?) of the new 3rd edition units yes. It refers to the new method of forging that makes them less vulnerable to having their souls blocked from returning to Azyr.
Castigators are a single unit type. You're thinking of Sacrosanct. They're a chamber of Stormcast that specialise in magic, including Evocators, Sequitors, and of course Castigators.

I mean just look at the data sheets and see which units have which keyword you're looking for.
Anything with [THUNDERSTRIKE] Likely came out with 3rd Edition, but not every unit has it.

You will have to look at each unit. The GW app and wah has warscrolls.

SCE army structure is a convoluted mess. As a recent convert to SCE, it does take some time to get used to... but you do get used to it. To echo that said above, just keep checking the warscrolls.

Stormcast units are organized into Conclaves, sort of like how Space Marines have Battleline, Close Support, and Fire Support battlefield roles, which multiple units are organized into.
Not all units are part of conclaves (like Draoth riders for example).
roughly, it's like this,
Redeemer - lightning bolt on their left shoulder (battleline melee units)
Paladin - crescent moon adorning their right shoulder (Beefy hard hitting infantry, the Paladins, and
Ahhnilators)
Ordinatos (artillery)
Justicar (infantry with bows - fire support)
Corpuscant (infantry with magic, like evocators)
Angelos - twin-tailed comet on their left shoulder (winged infantry + Vanguard dudes - scout/fast units)
Waves of releases are spread over the conclaves. For example, Evocators are part of Corpuscant, but the Sequitors are Redeemer. Just depends on battlefield role.
