There are lot of levels of quitting 40k. I've put my stuff on the shelf and tried other games during most of 6th/7th edition, but I never sold my core armies or even a lot of projects.
for a long time, one really common post/thread were people coming back from breaks, but they had sold their armies, and now regretted it. That happens a little less now, since so many armies have had nearly complete model refreshes from even five years ago, most notably the Primaris switcch. But still, if you had a nice sized Tau army back in 5th edition, you could put it right on the table now.
The moral of the story: take breaks, but don't sell painted armies

I started with Rogue Trader around '89. Didn't play much, but then Space Hul dropped; I played the heck out of that and all the expansions. That drew me into 2nd, which I also played like crazy. Continued in 3rd. Might have had a handful of games in 4th... But then hit another heyday with fifth.
I played 6th until I saw what they did with Sisters. I had already seen GSC come to an end, and it felt like the writing was on the wall for sisters too, so I bailed.
It took the GSC dex at the end of 7th to bring me back- I bought it on sight. I never did actually get to play 7th though, because they announced Gathering Storm, 8th and the rerelease of the Sisters in plastic mere months after the 7th GSC dex.
I went pedal to the metal for 8th, and kinda hoped for a persistent edition. When 9th dropped, I almost bailed, but Crusade kept me on board... So I went all in again. Not expecting a persistent edition again- I learned that from 8th.
Now that 10th is here, I'm tempted to bail again. I don't mind some of what I've seen, but I don't like putting flavour rules on detachments, and I hate what they've done with psychic abilities.
I am going to download all the free content though, and I will play a game or two to test it. I am invested in a bit of a project too- I'm building detachments for Imperial Agents since GW didn't. I'm starting with all three Ordos of the Inquisition, then the Rogue Traders and Navy, and finally the Arbites.
I'll be making Crusade content for them too, but that has to wait awhile- I don't want to design anything until I see what dex based Crusade content looks like.

Not sure "quit" is the right word, but I stopped playing 40k in the mid-90s. 2nd Edition didn't go down well with friends or the local gaming group. A few of us continued to play 1st Edition for a while, but eventually people drifted to things like Space Hulk, Dark Future, and Blood Bowl.
I rediscovered most of my 40k miniatures during lockdown, and I'm currently restoring and repainting them (some were in a very bad state). I have most of the Imperial Guard done, only a Rhino and Whirlwind to go. I keep meaning to post pics!

40k returnee (originally played 1987-1995). Also loves Space Hulk and Dark Future.
Currently repairing/repainting/restoring 1st Ed. Imperial Guard Regiment + Mentor Legion attachment and original Space Hulk. |

I've got some good/bad news for you.....
●1st the bad: The Guard no longer have access to Rhinos or Wirlwinds.
●Now the good: That means your Guard are done!

I've never properly quit 40k but I've taken the odd break when life gets in the way, such as uni or having a kid. Am currently on a bit of a hiatus while I work on my scale models; building 1/72 versions of the RAF's trinity of WWII heavy bombers, haven't played a game of 40k since March.

Started playing in 5th edition. My LGS closed in 2019, the summer before COVID, and I lost all interest in 9th edition.
Been playing some small 8th edition games at my house with a friend of mine occasionally. I like the looks of 10th, so I might get out and find a new club!

10th is the nail in the coffin for me. Our group mainly plays Horus Heresy alongside LotR, Necromunda, and Bolt Action. 40k was sidelined when 8th dropped and I only picked it up again towards the end of the edition, lasting a few months into 9th before ditching it again.
I sold off my various Chaos forces leaving only my Deathwatch but now I'm likely going to sell them off as well. They are perhaps the most enjoyable modeling project I've ever done with every single model being converted but they've not been used for almost two years now and as it stands I'll not be playing 10th.

Halfway through 5th I quit and almost sold everything warhammer I owned. Thankfully my brother pointed out that we could still play 3rd Ed. and so I only sold some of my stuff. Same iwth 6th Ed. WFB.

played 1st, didn't so much quit as life changed, didn't have time for gaming.
came back in 5th when youngest got into 40k, played 6th, 7th a bit, 8th was good, but not played 9th.
not exactly quit 40k, still have the models, still have and play 30k, and other games its just I have limited time and to be honest I prefer to play better games
40k can look amazing, and will probably play it a bit as yoof still does but it doesn't engage and draw me in

Left school to go to uni, and knew I would need the money more than the models.
I only restarted 18 years later, when my now-Wife wanted me to get a hobby, and I saw GW stuff in Hobbycraft. At least I could afford them again by then.

Yes. I played maybe three or four games in 7th and 8th edition and in my opinion it just wasn't fun.
Many elements of the game have not aged well, and until they can do away with them (e.g., IGOUGO, too many rolls, too many dice) I know the game won't appeal to me.
Thankfully, I'm spoiled for choices these days, and in the grim dark future of my gaming schedule, Warhammer will not be missed (but I'm very much enjoying painting and using their minis in other games, so thanks for that, GW!)

I didn't quit, I just kind of drifted off - tail end of 3rd edition, aside from a 500pt league run by the local GW store one year I'd never gamed regularly (the one player I had done full-size games with a few times was a bit of a knob, too), and I'd progressed from writing fiction for my armies to writing fiction only vaguely connected to my armies, in that I occasionally dropped a mention of them but functionally they were entirely standalone 40k works. I never made a decision to stop, but since it didn't seem likely I'd be gaming anytime soon - certainly not on any 'need to get a squad ready for next weekend' schedule - it's not like I had a pressing reason to blow my pocket money on more minis, so army-building stalled, and with it painting died off, and I got tired of trying to shoehorn queer romance into 40k in fiction and meandered off to other arenas.
I'm drifting a bit currently as well - I've found gaming a bit tedious, since even thought I'm kind of getting to grips with my chaos gals, there's no way I'm going to remember what the seventy different kinds of tactical marine on the other side of the table do and which special rules they can pull out of their buttplates at will (I mean, I could study all the other codices, but this is a hobby, not homework), so it's not like I can really formulate a plan besides 'screw it, everyone try to kill everyone'. On the plus side a salary has more leeway than pocket money, so there's no real pressure to not buy any minis I think look cool, therefore there's always something new on the stack to paint so I may as well paint them, and I can show them off here and on insta even if I'm not taking them to games - so getting tired of the actual game isn't as likely to take down the entire hobby for me.

I quit. Not really in a decisive "I quit!" moment yelled in dramatic tones. I didn't declare it, which means it wasn't legally binding either. But I sold my metal Mordians, sold all the vestiges of other armies I had started, and considered selling my mostly unbuilt pile of Vic Minis Tannenberg I still have in baggies. My desire to assemble those models to have 400pts of Guard still remains near zero, but a year or two ago, a new guy at work slowly got me back interested in the 40k world. Started with BFG after I got a 3d printer, but now I'm thinking I'll step back in, though with a far, far less model count intensive army (Knights?).
I dipped my toe out after 5th partly due to the rules, partly due to life changes at the time. I remained out of the active gaming side again partly due to life changes (starting a family) and the rules kept me away. I was more than happy to play BFG whenever the itch came up to move minis around a table.
I can't play at the local GW with my buddy with a 3d printed army, so I'll have to suck it up and buy a proper army if I'm to play there, but a 3d printed army is on the horizon for playing anywhere else.
I wager when I take a proper look at 10th I'll still find most of my complaints from 6th onwards to be present in some fashion, but I also just don't give as much a feth these days if it means I can spend some time with a buddy pushing minis around.

First played in 2nd ed with Nids, and a small Marines force. Played into 3rd, but by then it was a veeeeery rare occurrence, due to uni. A year after I dropped out of uni, I was living with friends. Had a game, but had to leave to visit my girlfriend. When I got home, my housemate had accidentally knocked over the "table" (wood balanced on 2 chairs), and half my Nids broke. That was my last game 'til 9th.
Basically, I had nobody to play with, a broken army, and no money. That would've been maybe 2004? 2005?
In 2012 I bought an Eldar start-collecting box, because I had some money. Assembled the Guardians, nothing else, didn't paint, still no friends who played.
About 2017, I was clearing stuff out of my house, and wound up putting an ad online - "GW minis - free to good home". That was like 3000 points of Nids, 1000 of Marines, an Undead Blood Bowl team, that Eldar box, and random stuff. Figured I'd never play again.
2020 rolls around, and I bought the CSM and Daemons 8e codices. A friend buys Blood Angels stuff. I start collecting Slaanesh, then get an incredible deal on some Necrons. By this point, I have the 9e Necrons codex.
Now our group has 4 players, a combined 8 or 9 armies, and we also play Kill Team and Boarding Patrol. Looking forward to 10th.
So I quit due to lack of players, money, and effort to fix broken minis. Glad to be back in it. My Slaanesh are nearly finished, Necrons not too far off, looking at Tau next, then maybe some Sororitas, Wolves, or Militarum.

I've got some good/bad news for you.....

 Yeah, I'm aware and rather sad about that. Rhinos always felt more like a low budget, mass produced transport for Imperial Guard than something those fancy pants Space Marines would lower themselves to use (assuming they could squeeze their scale creeping bodies into one).

Many various pauses due to life reasons.
At a certain point, somewhere around 5th or 6th, I came to terms with FOMO and realizing I can’t and never will keep up with the new units. I also didn’t like the heavier emphasis on flyers (6th?) and larger armies as it no longer felt like…well, I guess it just wasn’t the type of game I wanted to play.
I’m certainly not rebuying Rhinos for Primaris Rhinocessors or whatever they are. And that’s okay. I have enough to paint. I’ll stay in my lane with 3.5 and/or 5th and will finish picking up the codecies for 5th eventually.

Quit, as in making grand declarations and selling armies? No.
I took breaks a few times, because I didn't enjoy the current edition that much (e.g. 3rd and 7th), or because I found a different game more interesting for a while (e.g. Warmachine, Flames of War, X-Wing, Infinity...). Eventually, though, I'd lose interest in those other games, or they'd die off locally, and I was always glad to return to 40K with new editions or releases. For modelling and painting, it's unsurpassed, and as a game it's been good fun most of the time.

LOL! Just thinking about this!
When 40k went to 2nd ed, I was disappointed. When it went to 3rd, I went back to 1st.
A guy (decent enough fellow) I met outside an FLGS got into a discussion with me about that very thing. I casually remarked that I thought within 3 years or so, GW would come out with 4th. He grinned and smiled condescendingly, shaking his head ever so slightly.

Played 2nd and 3rd. Paused because video games, alcohol, and chasing girls were a lot more fun. Picked it back up at the start of 6th. Then at the tail end of 8th I bought a house that needed some TLC, covid hit, then had two kids during covid. I basically skipped 9th, but I'm pumped to jump back into 10th.

Started in 2nd. Played until 7th when I stepped away. I was not really enjoying 6th and I walked away in 7th. Focused on Flames of War during that time and didn't even read 40K lore.
When 8th dropped I dove back in, with my decision made easier by the free core rules and cheap indexes. I also got back into Black Library. Played weekly through 8th and 9th (with some pandemic disruptions of course) and I am looking forward to 9th.
I had not sold off my armies when I stopped playing, so perhaps some corner of my soul knew I would be back?

Wish i could gather up all you guys and have you join our group. when it comes to GW games (among all the other systems we all play) we have over a dozen players at our FLGS currently playing 5th ed 40K with some house rules fixes and we are having the best of times when we play 40K (or BFG for that matter).

Quit during 8th when the game just stopped being fun. They gutted the rules so much that it lost all the interesting gameplay elements. Game became so bare bones and then GW tried to pad it out with so much paid content that threw on more bloat (the thing 8th claimed to be trying to remove) that continued to have almost no gameplay depth. The rare opportunity that I got to play 7th were still a blast so it wasn't that I fell out of love with the game but that the game changed far too much for the worse.
Maybe 10th will be decent enough to play again but I doubt it. The lose of things like armor facings and blast weapons removed a tactical aspect that the current rule sets don't appear to be able to fill the void of (8th and 9th sure as gak didn't).

3 times.
- when I went to university (lifestyle change, quit for a long time. To give context about how long ago this was, my main army was Epic scale Squats)
when 7th ed came out and my gaming group stopped playing because nobody liked it (some people had already dropped out in 6th).
Late 8th edition when I felt the rules were becoming a dumpster fire of supplements, datasheets etc.
We are considering starting playing for 10th edition. Personally I have not really liked what I have seen so far but we will get a few trial games done when we have time and see how it goes.

I quit at the end of 5th Edition. Why?
I didn't like the direction of a number of rules coming in 6th.
I played at my local GW store and still played Lost & the Damned with minor changes to make them work with the at the time Chaos Codex with permission from the staff members but literally all of them had moved on so lost my permission rights to play them.
I was an unemployed teen at the time so didn't have the money to build a new army.
I did come back and play one game of 7th and dropped again because of the rules.
Now I just play my own homebrew game made from bits and parts of Necromunda/Mordheim/Warhammer/40K etc etc with my friends.
It's a skirmish game where everyone plays Chaos and everyone battles for the glory of their Chaos God.
