I have 2 questions about Drop Pods.
1. Is there anything restricting me to 1 squad in a Drop Pod? I'm thinking about running Bladeguard Veterans or Inner Circle Companions in a Drop Pod with a unit of either Hellblasters or Infernus Marines.

2. Was there a formatting error? In official documents there are examples that say that Eradicators can legally be carried in a Drop Pod, but Eradicators have the Gravis Keyword, which is specifically excluded from Drop Pods.

1) Nope! Take as many squads as can fit.

2) GW often gets their own rules wrong. Read the datasheet to verify.

What "official documents" are you reading?

From the 10th Ed Space Marines Codex, a Space Marine Drop Pod can transport 10 Adeptus Astartes Infantry models. It cannot transport Jump Pack, Wulfen, Gravis, Centruion or Terminator models. Not tracking any formatting errors - seems pretty clear.

Since Eradicators have the Gravis keyword and no special clause allowing them to avoid that, they cannot be transported by a Drop Pod. They can, however, be transported by Land Raiders This is a change from 9th Edition, so maybe that is what you are thinking? GW have been easing the initial restrictions about Primaris and Firstborne models and their transports which can certainly induce some uncertainty!

As for having more than one squad in the Drop Pod, you are free to do so as long as you respect the limit of 10 models and the excluded keywords. So Azrael with five Hellblasters and a Librarian with 3 Inner Circle Companions is absolutely legal. Two Devastator Squads is also a possibility.

All you have to do is fire three rounds a minute, and stand
