We've filled in most of the Horus Heresy's major plot points.... so what's next for the Horus Heresy timeline?

I can't imagine GW not producing more HH novel content.

4 Primarch novels left to go (Horus, Dorn Sanguinius, Mortarion).

That would be Alpharius: Head of the Hydra.

The obvious next step is the Scouring, where the traitors are chased off to the Eye of Terror. We already know a bit of what will happen (Imperial Fists and Iron Warriors fighting in the Iron Cage), and the scope is large enough that you can fit plenty of space opera. Game-wise, it's also easy to extend the existing HH-era games, since the units and factions will be more or less the same.

Yeah, my dream is that they'll add some daemon/xenos factions to the 30k games as well. Orks would fit well for sure. They were left out of the Horus Heresy entirely I think, but they were important in the Great Crusade, and maybe they'll show up in the Scouring. Eldar were obviously also around.

I thought Ruinstorm Daemons were a thing already.

7 models does not an army make when they aren't all titanic monsters

It's Daemons, they already have models. The point is to convert them because the Ruinstorm is Chaos in it's truest form.

Just Horus left. The others have been out for years.

Sanguinius: The Great Angel
Rogal Dorn: The Emperor’s Crusader
Mortarion: The Pale King

I suspect we may not ever get Horus tbh.

Huh, totally missed those. And honestly, yeah, seeing as the fine gent got a whole series in his name.

I personally consider the first three HH novels to be Horus' "Primarch Novel".
