Depends on what you're talking about. A lot of Gundam is one off side stories. From my list Iron Blooded Orphans, Wing, and G are all in their own pocket universes and are very one and done. You really only have to worry about continuity when talking about things that take place in the original MS Gundam Universal Century timeline and while the important part there is you watch some version of the original before things like Zeta or Char's Counterattack, the ones I recommended are fairly standalone experiences. Both 08th and 0083 can be enjoyed with little knowledge of the franchise that tell their own little stories.
