So I notice that an IG hardened veterans squad can be composed of as few as 5 veterans, and can take three special weapons. So if I'm using the veterans doctrine so I can throw in lots of them, would it make sense to do lots of little squads so I can have tons of special weapons? Then I could veteran tank killers or whatever else.
Also, is there any point in using armoured fist squads for capturing objectives if I'm using the drop troops doctrine?
I'd appreciate any advice, thanks very much in advance.

Personally I've used one deepstriking Hardened Veterans squad with three melta guns to quite good effect. Great for taking out those pesky Whirlwinds.

Yeah, three min sized vet squads with three melta guns apiece are the way to go. Cheap tank killers and character snipers. As far as armored fists go, you do not take chimera's for mobility, they are light tanks.

The three mini vet squads with meltas is the way to go, although deep striking them isn't always the best option.
Try outflanking them. It works because you don't have to worry about deep strike mishaps or scattering out of range.
