They used to have a map of one with details on the GW website. I'll see if I can find it and post up a link. It has a rather nice pic in either the apocalypse or Cities of Death rulebook-I forgot :(
Also, it has some description in the necromunda rule book.

I always though they would look kinda like how an ant farm would look with levels.

Then it comes to be that the soothing light at the end of your tunnel, its just a freight train coming your way!

Like the pictures indicate, they're basically just standard cities with each level built on top of the next. So streets on the bottom are typically not open to the sky, as other buildings and streets of the upper levels are built on top of them.

How do the various armies ever control the whole hive since you would have to take the city level by level

In some of the larger hives, they leave the bottom level alone. On valhala, they send down troops with flamers every now and then. On necromunda, they just completely leave the lower levels (the "underhive").

Sounds about right the lower part of the hive (underhive)is the run down industrial part then there is the wall that seperates the underhive from the spire were the planetary governor and upper classes live.

The underhive in most cases is left to govern itself as long as manufacturing continues but sometimes the planetary governor may order a sweep of the underhive to fill out his quota for the imperial guard.

On some cities, there's no manufactorum at all. The majority of stuff is imported. Necromunda make up with their enormous amonunt of guard though. Also, the underhives a nice place for cults to grow in strength and mutants to hide.
