Hi Guys,

Just wondered... is there anything keeping me from adding Saruman to a Mumak, and having him heal the crewmen?

Unfortunately in a legal, yes. Isengard can't allie with Harad.
Unless you convert a mumak to Isengard... i've seen it done before, and it looks good!

In War of the Ring, Isengard can ally with Fallen Realms, who have a mamuk.

In WOTR, the evil factions are Mordor, Isengard, Moria, Fallen Realms and Angmar. They can ally with each other by taking up to 25% of their points from a different list. It's really flexible and cool, I think.
The Good armies are Gondor and Arnor, Rohan, Elven Kingdoms, Dwarven Holds and Forgotten Kingdoms, who can only be taken as allies to one of the other Good Forces.
Forgotten Kingdoms has the White Council, the Five Wizards, the Fellowship of the Ring, Hobbits, Ents, Wardens of the Carrock, Great Eagles and all that in it.

As to the OPs question, I don't think there is anything stopping you doing that.

So do healed wound still cause the tally to go up, or are they subtracted?

I had a look at the rules, and from what I can see, it would be fine, but Saruman would only be able to heal the crew, he wouldn't be able to remove wound counters. So the Mamuk will be a lot less likely to stampede, and you'll have an awesome spellcasting platform for Saruman, but you won't be able to keep the mamuk alive indefinitely.
