I've only played a handful of games, 4 in total, and I've had experienced players guiding me along. I picked up a Tau army last week, to go with my Flesh Tearers but I can't work out how many shots a weapon has.

Is it where you see, for example, Assault 2, or Heavy 4 - and those numbers are how many shots a weapon can make?

Yes. An Assault 2 weapon has 2 shots and is of the assault type. This stuff is in the rulebook.
