I'm thinking about starting a Mordheim campaign with some friends (first time), and I've heard Coreheim is the way to go. Is this the latest version?

Are there rules for the alternate warbands, such as dwarf treasure hunters or orcs and goblins?

Nah, coreheim sticks to the core. While the rules are more balanced, Mordheim was made for more narrative style of play, especially with all of the WD material.

It's ok but I think just a few tweaks here and there are needed i.e. cut down on access to two hand weapons, make armour actually mean something, should Skaven have access to six heroes right off the bat? etc. Mordheim doesn't need to be that balanced. It's just a bit of fun.
