Hey mate.
I picked up a terraflex molded silicon gaming mat a while ago, the one with a ruined city texture - at 6'x4'.
What i've done is i've picked up two lengths of 6' wood planks, and a 6'x4' piece of
MDF, cut in half down the middle.
I lay the planks on the dining room table, then put the
mdf on top of that, followed by the gaming mat, which just rolls out.
I also added some cheap flat stoppers on to the wood planks to make sure nothing ever slips - all up the wood and stoppers only cost about $30 AUD - Stupid cheap!
As for terrain, i use slavetopainting.com - they have a pretty killer range of terrain.
Also be sure to check out ebay - there is HEAPS of awesome laser cut and resin stuff on there.
In regards to the dice tray, just use whatever you like - you can even get some cool dice towers from on ebay or some gaming sites, or even make it yourself out of whatever you have lying around that either has or can be cut down to have a bit of ridge to stop dice flying everywhere. Add a bit of felt if it's too noisy too.
EDIT: I just remmebered that KR Multicase do a portable dice tray that's pretty rad - but may be a bit expensive
