I recently got into Hordes with a Circle starter kit and I like the look of Morriag; does anyone have any advice on how to proceed with putting together a Wild Hunt force?

Two games at present with my secondhand Skorne force against Warmachine armies, one victory because Titans are terrifying and one defeat because the other guy got off a lucky shot on my warlock.

Well theme forces give a lot of choice and variety away for what are, more often than not, quite limited benefits. They are very much played (in the majority of cases) just because you like that particular bit of fluff/those particular models/that sort of thing.

Of course there are exceptions, Stormbringers springs to mind (Haley2's theme force from No Quarter is pretty damn good from what I've heard, as theme forces go), but the majority are more like her other theme force, Gravediggers (Trenchers, trenchers everywhere...so of course I've got the models to run a Tier 4 version of it )

I wish I had time for all the game systems I own, let alone want to own...

I guess the question is whether there's anything irreplaceable in the stuff I lose running the themed force, then (I'd lose units that aren't Reeves, Bloodtrackers, Wolf Riders, or Wolves, solos that aren't Druid Hunters, Bloodtrackers, Morriag, or War Wolves, and warbeasts that aren't living, for those who don't feel like looking it up).

I generally advise against starting with theme forces. But if that is what interests you then go for it.

Shifting Stones are kind of a big deal, and you can't take them in that theme force. I'm not sure you're really getting much out of the list for the units you'd have to take. Would probably not recommend, especially to start with.

Theme forces are pretty weird. You generally shouldn't use them unless you have a good reason to.

I would stick just a standard list for now. You can always pick up the stuff to run that theme list later.
