I'm not married to a second Gallows or the Wolves so they can come out, I was considering just a second shifting stone unit to fill it out?

I might run Druids in place of the Wolves, actually, they open up a lot of different options and make it impressively hard to get at your stuff when you don't want the enemy there (DEF 14 Skinwalkers that can't be targeted by enemy spells). As to random solos nobody's really springing to mind, we don't have a lot in the first place and most of them don't really do anything for the Goat Lady. A random Reeve Hunter or a minion Croak Hunter gives you some extra ranged threat with Hunter (so they ignore Fog of War) but they're only really useful for removing squishy support models, if you're fighting Menoth or some such they might be worthwhile.
