Azog is beast for certain, the only thing that puts me off him is the relatively low Defence stat. He is a great hero-killer and on the White Warg has a lot of Might and attacks.
Personally, I usually default to:
The Witch King of Angmar with The War Crown of Morgul, 2-3 Might, 2-3 Fate and 15-20 Will. He only has one Wound, so Fate is a priority, but has a good defence, surprisingly high hitting power and plenty of spellcasting ability to level the fight with tougher enemies (Transfix and Compel are great for that).
Gothmog, as his ability to counter-call a free Heroic Action if near an enemy can be very good for boosting your chance of getting off the crucial charge; being able to counter-heroic-move and force a roll-off is much better than getting charged without a doubt, and similarly, he can potentially deter the enemy from calling Heroic Fights ect near him, for fear of boosting his own potential.
Orc Captains... Cheap and cheerful, they leave more points for MORE ORCS, which is never a bad thing.

I usually roll with multiple Orc captains because they leave room for a gigantic horde of baddies, which is thematic and effective, or I use the Witch King on Fell Beast, which requires more finesse to play but can be effective if used well. I find his store of Will tends to slowly drain away in longer games though. Azog looks cool. If he didn't cost so much for a single model (and if I could get him in metal) I would definitely pick him up. I love aggressive, fighty heroes, and the only decent ones we have are disposable Captains, or the Troll. It's just fun to bust heads with a powerful hero in this game, even if it's not always the most effective thing! I have never tried Sauron out, though, so I dunno how good he is. Seems like he's a bit pricey for what he brings to the table.

Have you tried Shagrat, War Leader of Cirith Ungol? I've never used him myself, but with 3s in all the heroic stats, D7 and S5 as well as being able to Knock to The Ground when charging seems pretty good for fighty Mordor heroes. 3 Wounds and Attacks as well, so if he charges and wins he hits with a massive 6 Attacks.
I used Sauron once in a Last Alliance scenario, him vs Gil-Galad, Elendil, Elrond and Isildur. He went down eventually, but it took a hell of a long time to die with the Ring, and the enemy burnt through Might quite fast trying to get him. No idea how he'd stack up in a 'normal' game, though, as 500 points buys a lot of Orc warbands.

Is that version in a later supplement? I only have the blue mini rulebook at the moment.
Are the points and profiles for all the LOTR stuff in the big Hobbit rulebook? I really wish there was a consolidated resource for that!

Ah, he's from the Mordor sourcebook. 110 points for all the stuff mentioned above. Probably the choppiest option for Mordor, all things told.
Sadly the Hobbit book is very sparse on profiles, only the AUJ stuff is covered.

Hmmm.
To be honest, stuff like this makes me feel more and more like hoisting the black flag, which is something I never normally do. But at least the Mordor book is still available.
