There is a little bit of a trick though.
Per the rules, you show up with all the models you think you might want to play with and then deploy some of them, leaving the rest in reserve.
So, while it's true that all Chaos Wizards know the Summon Lord of Change spell, the spell won't actually DO anything unless you showed up with a Lord of Change that you have sitting aside, waiting to come in. Your opponent should be able to see these models and deploy accordingly, knowing that he will probably be facing a Lord of Change at some point during the game.
Additionally, be aware that there is a debate as to what happens with slain models. Some people think it's OK to throw slain models back into the summonable models pool. Others read the rules removing slain models from play as preventing them from being summoned back into play. In essence, that specific model is dead and not waiting in the wings. The idea is that if you want to be able to summon two Lords of Change throughout the game, you need to start with two held back during the deployment phase. If you start reusing models throughout the game, your opponent will have no ability to tell what you might summon and won't be able to deploy accordingly.
