1) Think nightmares - theres artwork, but its mostly silhouettes. Spidery limbs, thin tentacles, skeletal frames, that sort of thing. Most started out as humanoid and grew extra limbs and stuff. A couple of nonhumanoid creatures are in there as well though, like a deformed kraken-thing.
2) Probably. Depends on what you have though. Slaanesh and Tzeentch would probably work best, though Id change the colour pallette a bit.
3) 20mm.

Like Nids, GW Daemons and the entire Cthullu Mythos had a drunken orgy, and this is the Hell-Spawn that came out of it. So awesome
Yes you can totally use GW Daemons, as said Slaanesh and Tzeentch will probably work best, Khorne may do ok, Nurgle probably not so much. Though a Nurgle BEast could probably find a few things to be used as.

There are several themes possible for night stalkers that I kicked around before I settled on one.
1. Cthulhu theme: Reaper makes plenty of nice models for this and several of them are in the budget friendly bones line. Deep ones or cultists for your regiments, hounds of tindalos for cavalry, shoggoth as a terror. Everyone seems to like the Reaper Bathalians as fiends.
2. Whimsical: I've seen a few suggestions for pumpkin head stuff like Nightmare before Christmas. I don't know of many minis that would work (again Reaper makes a few) but it would look great if you don't mind doing your own modeling or heavy converting.
3. Mad Scientists: I'm using my old Confrontation Alchemists combined with the Warmahordes Cephalyx to run an army of Frankenstein monsters and their evil overlords. Miniature Market has several of the old Rackham prepaints for dirt cheap.
4. Pirates of the Caribbean: Warmahordes and the Pathfinder prepaints both have a nice selection of undead pirates, and Reaper has some nice monsters (love that Kraken!) that would fit in nicely for an alternative to the standard VC style army.

Others on the 'whimsical' side have included Clowns (scary!) and My Little Pony (Really Scary! As Nightmares!)
The Auld Grump - Four Foot Snake has it that 'No Clowns!' was supposed to be one of the rules for the army....
