How good are most of the old Fantasy armies in AoS?
Not necessarily in a super competitive way, but just as armies in general.

Thinking of dabbling into AoS but ideally with my existing lists.
Empire and Ogres.

For the Ogres, it was mostly the units that have made it into Gutbusters, but a few Mournfang too.
Not enough for a Beastclaw list though.. (and no Stone/Thunder beasties).

Are the older lists Mostly just there to keep WH players happy that the models are usable. Or are they still in there with the new stuff that’s being released?

What do you mean exactly when you say "old fantasy armies"? Some were sorted when they made the first GHB a few years back and have not gotten an update since then (does not automatically mean they are bad) while others have been rolled into or expanded upon to create entire factions. For example, the just witch elves from the dark elves were put into their own army "Daughters of Khaine" with a bunch of new kits. The ghoul part of vampire counts was made into their own faction by devising new builds from existing kits to make the Flesh Eater Courts. Night Goblins, Trolls, and Spider Riders were rolled into a big faction called Gloomspite Gits which is seperate from Orcs, while Beasts of Chaos exist as they were (just minus the models that were cut).

On to the specifics, foot-Ogres were put into Gutbusters while mounted-Ogres were put into Beastclaw Raiders. Ogres are not in a great place right now army-wise and it is widely felt they will get a combined battletome in the relatively near future; I would wait for that.

Empire has been split up into several sub-factions, but the main empire infantry were put into a faction called Freeguild. These guys have a section on the latest GHB and so are a current army in the sense that they have decent rules and are not going to be cut.

I try to view Warhammer as more of a toolbox with examples than fully complete games.

I think what you are interested in is the Compendium units, These are a collection of free pdf downloads that contain warscrolls for older models that have not carried over into Aos.

For eg the Ogre Kingdom compendium contains 2 warscrolls, 1 known as the Overtyrant and the other is a Standard bearer, Those scrolls have a points cost and are legal in matched play but up to tournament organizer discretion for competitive play, Alongside those 2 warscrolls is a list that has all of the old miniatures/units and next to them they state which Aos warscroll is used to play them for eg Greasus goldtooth is an Overtyrant and Goldfang maneater is listed as either a Maneater or a Tyrant.
