It seems to me I can have one acolyte squad of five models for my Inquisitor, but can I have more acolytes if I have a second detachment with another Inquisitor is this correct how this could work? Or is there any other way to field more Acolytes?
I understand there are a lot of points but I don't want to play competitively I just want to pay narratively.

If you really want, you can take up to 18 acolytes in an army - 3 squads of 6. You don't need to take multiple detachments, you can do it all in one vanguard - one inquisitor HQ + the 3 acolyte squads, plus up to 3 more elites choices. So you could take 3 monkeys too if you wanted, for example.
The only way to take acolytes is in an Inquisition vanguard, you can't take them as part of another Imperium detachment (well, you can, but the detachment loses its keyword and becomes just a generic IMPERIUM detachment with no stratagems or detachment bonuses, so you'd never want to).

Thank you for the info I'm very new to Warhammer 40K and I'm still trying to find out details about how to build my army there's so much nuance so much information out there.

You can have a lot more than 18 acolytes in an army.
A single Vanguard (led by the inquisitor) can have up to 6 Elite slots, so 36 total acolytes if you chose not to take any other elite unit. If you decide to bring a second inquisitor in another detachment, you can continue to add even more acolytes.

Rule of 3. They're elites, so you can't have an unlimited amount. 3 squads = 18 acolytes.
I mean, I guess if you only play narrative missions, those restrictions don't apply. But for the way most people play the game (whether competitive or not), you're limited to 18.

Oh right, being Elites that stuffs that up. You pretty much have to use Guard as pseudo acolytes I guess.

Probably for the best. Acolytes are not a practical unit to make an army out of, and scions are fairly close to the inquisitorial stormtroopers of old.

This is what I do, use the Imperial Guard codex to represent my Inquisitor’s retinue. Infantry Squads, Veteran Squads, Special Weapon Squads, etc... as well as other units all make decent Inquisitor retinue material. Especially when modelled to look like a rag tag force rather than an army.
Not ideal, but strictly using the options that Inquisitors have available isn’t practical for any reasonably sized force.
