The Celestial Vindicators look like they have a decent chapter tactic (or whatever they're called in AoS), but so many units in the Stormcast Eternals army seem to have another ability that also activates on a natural 6, and from what I've heard you can only pick one such ability to use (if that's not the case please let me know, because that would be awesome, if possibly game-breaking).

So how do you personally handle list-building so that you're fielding the best units, but not doing so in a way that makes either the chapter tactic or the unit's normal special ability go to waste?

You are correct; a given roll of X can only trigger one thing so cannot tack triggers like previous editions. However it is worth breaking down a little in this case...
-The Vindicators ability picks a unit that charged, and it only affects melee. So any ranged-based triggers won't overlap.
-While SCE battleline has a lot of 6s-to-hit-do-this, the overall roster is so large and so varied there is more than enough room to build around that. Vanquishers and Liberators are good choices for Vindicator battleline.
-To get the benefit, you need to have charged. This makes it good with combos which allow units to be charging (Imperitant + deep strike), and/or units which already benefit from charging in a way which stacks with Vindicators (Fulminators, Annihilators).

Hope that helps!

Yeah, I was thinking about Vanquishers, but the Vindictors just look so nice (it's the "auto Mortal Wound on a 6" that's drawing me to them). But since the Vindicators' tactic only works with one unit per use, now that I think more about it I feel like I can still take some Vindictors without the tactic going to waste.

Thanks for reminding me of the Imperitant, by the way - I was originally going to make my force a Stormkeep army, so he wasn't on my radar, but that deep strike ability definitely looks useful. And those Annihilators look like they hit like a freight train, though I'm looking more at Retributors for my heavy hitting power just because they have more attacks.

Keep in mind retributor's can't benefit from imperator's 7" deep strike

Thing is the Annihilator's MWs on charge happen *before* the combat phase, before unleash hell even. That makes them more valuable than damage from attacks which only happens when they get around to swinging.

Yep, you're right - Imperitant's ability only works with Thunderstrike armor.
