Magnets.
What does the rest of your list look like, what kind of opponents do you faca and have trouble with? What detachment do oyu use?
‘Fexes are kind of a toolbox units that can go a few different ways.

Broadly, I tend to favour One Job loadouts. As in, I’ve decided what I want that Brood to do, and arm it accordingly.
But yeah, magnets are your friend. It’s a wee bit of work, as the kit isn’t sculpted with sockets. But being a fairly chunky kit, it’s not a terribly difficult job.

You may find Wraiths tough going, because they have really, really nasty weapons.
I think I’d probably want to forgo shooting, because they’re a tough target, and Tyranid shooting is middling at best.

Grain of salt: I’ve not hit the table in 10th with my nids.
For fexes I don’t see the point in going full melee. You are either going to go with claws amd full talons, of which you can only swing.with one. Flexibility is nice, but there is the opportunity cost of not taking something you can use in addition to, instead of either/or.
If you take the extra talons you get 2 more swings. Yay? Or a HVC which is the same profile but instead of 2 melee swing is 36” d3 blast. And that’s just the direct comparison. They have a number of other shooting options.
I don’t know if I’d go full shooting. Seems an expensive platform, and I’ve not run the numbers to see how efficient it is. I know I would not go full melee. Giving up the extra couple of swings for a gun seems well worth it.
If you want a full melee build, the dedicated SK datasheet seems the way to go. It’s not 6+2 attacks, but 10, with +1 more To Hit amd S.

Thing is, the Carnifex is usually a "gap filler" creature that you configure to cover holes in your army opposed to something that has a bespoke role.
As others said, magnets are the best option since the "best" loadout changes every edition more or less. Previously it was Deathspitters + Venom Cannons and before that it was quad brainleech worm devourers.

You can have the Crushing Claws replace the main set of Scything Talons, so you keep the extra scything talons attacks with the crushing claws. It isn't a huge boon, but it does get them back up to 6 attacks each against infantry while focusing on an anti-armor role.
The main problem for the pure melee Carnifex is that their main use-case is as bodyguards for Old One Eye, so having a gun gets you more use out of his reroll to-hit ability.

You can go full shooting with Old One Eye attached. He will generally destroy anything before the dakkafexes get a chance to swing, so having them provide suppressing fire on the way in is fine. On their own they are prone to getting bogged down though.
