It truly is a remarkably easy game to play. - I think the standard is about 1.5 turns. 1 turn to understand the movement rules, then half a turn as the ships fly into firing range and you learn the shooting rules.
The "Quick Reference" on the back page, is for all intents and purposes, the games rules.

Definitely agree X-Wing is extremely easy to learn. Friend and I playing the game, with neither of us having played before, both had the game understood within 30 mins. I think it helps that there is a strong visual element (the turning shapes, line of fire etc.) and less abstraction, all the stats are there in front of you etc.
If the OP is after something fantasy like with mass battles though probably Kings of War is the way to go, tremendously easy to learn. Again, you can probably get it comfortably after one game.
As a testament to Kings of War, I once ran demos of it for the LGS. Two young lads came in to try out their first ever wargame and understood how the game played by the second turn. They loved it so much that they spent the entire day demoing it, while I talked about it with other customers, with only minimal input/clarifications from me.
