Hi, first off let me say I've not played since early 4th edition, so I'm a little rusty.

I've recently got back into the hobby after inheriting some Space Wolves from an emigrating friend.
Combined with my old minis I have roughly;

One Rune Priest
A Lascannon/missile dread
40ish Grey Hunters (well, Tac marines, with the missile launcher blokes put to use as Long Fangs)
Some actual Long Fangs, but can't find the weapon arms.
Land Raider Crusader (Two twin linked lascannons and a twin linked heavy bolter)
Vindicator
Rhino
Space Hulk terminators (the old ones with a heavy flamer dude, 3 normal guys and a sarge, not the latest models)
13th Company Grey Slayers (I think they're called, got slightly Chaosy armour)

My first opponent is a long time Nids player and will be fielding a lot of the little beasties backed up with a Tyrant, Carnifex (or 3) and some Warriors. I may be wrong on the big gribblies.

My questions are;

Lone Wolves, worth it against Nids? If so, what load out.
Wolf Scouts, as above.
Does missile launcher spam work against Nids?
Is it worth the extra few points to upgrade heavy bolter razorbacks to assault cannons?
Should I take the vindicator or use the spot for *insert heavy support here*?
Rune Priest against Nids, should I just kit out a Wolf Lord?
Looking to play roughly 1500points.

If I've missed anything important, please let me know!

First,

Welcome to Dakka.

While I am against tailoring a list to fight a specific enemy I can tell you what is effective against Nids.

Missile launcher spam is fantastic, especially if he is going to run warriors. The Missiles will insta kill his multiwound toughness 4 creatures. The missiles will also easily wound all of his big MC's. Aside from that flamers are absolutely fantastic against the smaller horde based creatures. Also anything that gives multiple shots is nice as the small nids armor is terrible overall.

I know tailoring a list isn't optimal, but this person is determined to table me.

It seems to me that 5 Long Fangs are a bit squishy to ranged fire and especially close combat. Ideally it wouldn't come to that.

Long fangs should fair pretty well against tyranids. If you place them in some cover, they should last a while at least. Most tyranid shooting turn 1 and 2 will be aimed at opening up tanks if possible. All of their long range guns will likely go to that effort. The smaller arms fire is limited in range from 12-18 inches and it will take 2-3 turns before it comes down on you from the back of your deployment zone. If your long fangs take out one MC and tie something up for a round of assault then they have been useful.

Now if he has spore pods of a DS trygon he could get there sooner, but overall, my nids don't like long fangs.

Figure out a way to build/buy/steal:

15 Long Fang missile launchers
3 Terminator Lone Wolves with Power Fist and Storm Shield for killing everything, or dual Wolf Claws for killing... still pretty much everything

If you can get that done it's going to be real difficult for your opponent to beat you, never mind table you.

I'm planning on buying the Space Wolf terminator box set. I don't see anyone have a problem with me using them as Lone Wolves. If I magnetise the arms, I can mix and match weapon load outs if I feel like using them as Wolf Guard.

I can't seem to find the missile launcher Long Fangs on the GW site, they've not been discontinued have they?

JotWW is REALLY nasty against carnifexs and tervigons with their I1. Trygons are still a not a bad target but they are I4 so it's 50/50.
