I was beginning to build my ogres and could not decide if I wanted standards...

Remember that breaking from combat will cost you an entire ogre though(  ).

Is there a guide to how many standards an army should have given this many points for those blood and glory matches?

Well having enough to avoid auto losing is a good place to start. Assuming 2400-2500pts your break point is 3, which means as a minimum you need two standards (BSB counts) on top of your compulsory general (for a total of 4) to avoid auto losing. After that its somewhat down to player preference but there will also be some variation between different armies. Horde armies will generally have more and elite armies tend to have less. Ogres are definitely going to be on the lower side most of the time, but the units with Standards are usually going to be fairly sizable units which are tough to break and your General is pretty hard to kill as well (Cannons etc aside) so it balances out. Personally I try make sure that I have enough standards so that I can lose my general (say to a cannon shot turn 1) and at least still be able to keep fighting. Admittedly I'm going to be in a massive hole as BSB Slann dead = -3 and a huge chunk of points/magic ability gone (usually its going to be -4 as the TG probably need to be completely dead as well if its in combat) but at least I can keep fighting with my remaining two units of Saurus and two small Skrox units. On the other hand it also gives me enough units that I can throw away everything other than the TG block and still not break, which is nice from a tactical standpoint.

Unless you will be playing Blood and Glory, No.
one unit of IGs with a Flaming Banner or Rune Maw. I usually don't have a Magic banner for the BSB, but he would either get the Standard of Disipline and go with the General(for rerollable Ld10 loophole lols) or possably the Rune Maw.
Ogre Banners just arn't worth +1 combat Rez when the bearer will die if the unit breaks.
i usually Deathstar a large unit of bulls with all my characters in it so it isn't likely to break from combat(have yet to find a match for the unit in CC, charge or not)

Basically GW says – If you think the extra LD is worth the magic banner slot and tying your genereal to a single unit feel free to do it

I know it's 100% legal. it's just that people have a problem with the unit the banner is in using the General's Ld because they don't draw the difference between IP and highest Ld in the unit.

I ran the numbers and it looks like 16 bulls, a butcher and a BSB with runemaw is the way to go in a 3000 point game... I was also thinking about running 3 units of 4 Ironguts to cover the flanks as well as hit people.
With only 1 unit of bulls, I can only run 1 unit of gnoblars... with 3 boxes at my disposal, that is ~60 gnoblars (I think)... A unit of 40 should be good enough to cover the rear of the bulls and to be a target for the rune maw. The other 20 I will use as gretchin for my 40k Orks.
I was also thinking about 2 Maneaters, 1 each to hide behind my slaughter master and my Tyrant, to provide extra attacks and wounds for shooting.
In addition I was thinking about 1 unit of 3 yeties modeled as ninja ogres (hence the ability to climb) with blades made from ice.
Would I just be better off running gorgers instead? I can only run 3 in a <3000 point game and 6 at a >3000 point game, correct?

I think its worth it just to have the crows nest with the little gnoblar in it. Any self respecting OK army just has to have that in somewhere.

only 16 bulls? i do 27 myself, 1 unit of 6 IGs, and some Rhinox cavelry(or a Giant and another unit of IGs)
27 Bulls + characters = unstoppable Deathstar(barring ROFL Purple Sun/Pit of Lawlz)
I have only lost 1 game with this army(out of 8 so far) and that was against Lizardmen and i rolled horribly vs Dwellers and he had the Blade of Realities which gibbed my Tyrant and Rhinox pretty easily.
