None of them.
Griffins are T5, no save monsters. They are too big to hide, to weak to survive mass shooting, (margially) too powerful to let get into close combat, and surrender too many VP when killed. They are priority targets and die fast, along with hippogriffs, manticores, and all the other 'mid-sized' monsters.
Worst of all... anything that won't wipe the floor with them in one turn of close combat will be in units far too large to break in one turn, or even several turns. So the griffin winds up either getting worn down, or breaking due to the other side's SCR advantage. Either way, the end result is a dead griffin.

Mainly usefull for zipping wizards around the field or taking out war machines or enemy wizards.

Ive given away atleast 3 of IoB griffons they are unsellable because they are that bad.

I'll disagree with everyone and say that someone does it best, and that someone is Empire. Reasons are that Empire is well equipped to use it for its strengths. The primary strength is the 18" leadership radius from the General being on a large target, and Empire troops really benefit from the General's leadership. Secondarily, the General of the Empire is pretty cheap, so you can efficiently hang back and use the character on a Griffon as a reserve to support your combat blocks, or as a hunter of small support units. It doesn't kick ass, but it doesn't have to to get its job done.
