Alright, here goes. First off, I am new to 40k and have not really collected any miniatures yet. This is just a list I figure wouldn't look too bad, though I could be wrong. I would kind of like to have a infantry based army, though I'd like to have it be versatile and able to take on many different types of armies.
CCS- Lord Castellan Creed, Melta Bombs (for officer Creed), Medipack, regimental standard, vox-caster, plasma gun, carapace armour- 230 pts
PCS- Power weapon, standard, vox-caster, Meltagun, Plasma gun, and krak 'nades- 90 pts
INF Squad- Power weapon, Flamer, Heavy Bolter, Krak 'nades, Vox-caster- 90 pts
Veteran Squad- Flamer, Grenade launcher, "Grenadiers," power weapon, vox-caster-125 pts
Veteran Squad2- Power weapon, vox-caster, Grenade launcher, Melta gun, Plasma gun, "Demolitions." - 145 pts
INF Squad2- Melta bombs, Power weapon, Flamer, Heavy Bolter, Krak 'nades, vox caster -95 pts
Valkyrie- Lascannon and Heavy Bolter sponsons- 125 pts
Leman Russ Battletank- Lascannon, Heavy Bolter Sponsons, Hunter-killer missile, Extra armour- 210 pts
2 x Lord Commissars- Power weapons, Carapace armour, Melta Bombs- 190 pts combined
All in all, what I'm trying to get is what is the best infantry orientated anti-infantry/ armour/ heavy infantry list for imperial guard? I am just looking for an army that can do it all. Anyways thanks a lot for bearing with me!

Way too many upgrades in general.
CCS: Creed can be decent, but make sure you're going to be using more than 2 orders a turn. If not, a normal CCS is far superior as it is that much cheaper. Most CCS's want limited upgrades; banner, 4x special weapons, or a heavy weapon. Thats about it. (possibly some advisers too). medipack/vox/carapace are all a bit of a waste.
Lord commissars you can only take one of with CCS, as you can only have 2 HQ choices in your army. Make sure they have a unit to go with, and a specific role to play.
PCS are weedy, so should have limited upgrades. Again only specials and heavies. 4x flamer is a popular build for them.
Infantry squads in general want to be blobbed up with commissars (to give stubborn), and want special/heavy weapons and no other upgrades (normally). Note that grenade launchers and heavy bolters are poor weapons, and should never be taken. The best specials are plasma/melta/flamers. The best heavies are lascannon/autocannon.
Veteran squads want to take full advantage of their 3 special weapons, so grab 3 of the same kind. The doctrines are interesting and can be useful, but with those you need to have a plan in mind.
Valkyries are okay, it a shame, since Vendettas are in almost every way their superior. If you want a flyer, get a vendetta. Maybe 2.
The basic leman russ wants to be without sponsons, due to the FAQ change making them all heavy. The non-ordnance russes want to take sponsons. Most are viable, so pick one that you like.
Imperial guard can get ridiculous amounts of special and heavy weapons into an army, and that is basically what they do. You can run them as foot, mech, aircav, or a hybrid. All have their good and bad points, and all are viable to one degree or another.

Thank you very much! However there is one thing I ask and that is if the veteran squads are even worth having doctrines. The grenadiers option gives that one unit a 4+ armour save, making them less paper-thin. And the Demolitions squad have everyone armed with melta bombs, which makes that squad seem to be useful as tank-busters, though it is probably not a GREAT defence against tanks.
P.S.S If I were to take a heavy weapons team, do you suggest lascannons or autocannons?

Other than not being able to have 3 HQs, I think only 1 is really necessary. ATM you have 1 tank and 1 flier + some dudes on the ground. I would suggest getting multiples of either of them as its easy enough to knock out one russ, but 3? Not so much (likewise situation for the fliers). As for veterans doctrines, I dont feel the grenadiers are worth +30pts. The only one I'd possibly consider is demolitions but that depends on what you are doing with the rest of the army. If you are looking for an infantry/armour themed list you could loose the valkyrie. Generally in an infantry/heavy armour list you would just have platoons supported by tanks (artillery and/or russes).IMO vets are a bit expensive to field on foot, with platoons you can get the numbers easily and still have sufficient heavy/special weapons in there. Also you probably want to choose what you are going to outflank with creed (if you're not planning to use that, I'd probably just get a regular commander) In general, I would loose many of the upgrades, streamline special weapons choices and choose what sort of direction you want to go thematically. 4 infantry squads, a russ and a valkyrie is pretty mixed. - also are you trying to make a DKOK style army specifically?

Well, I plan on having a few DKOK units, but I wouldn't say it is entirely themed that way. I believe I'll add some Vostroyan and Cadian units at some point. Anyways, thank you all for the suggestions, and I appreciate this Dakka!

Best using of infantry is called "stand and shoot army from hell", in case of IG it's using HWT in platoons
At first, take CCS with standart
And then, platoon with comissar with power axe in one of the quads. Put autocannons in infantry squads. I'm not sure about special weapon, flamer is good some cases, but template too short to fire at fast charging enemies, Combine infantry squads.
Also, take heavy weapons squad with 3 autocannon or lascannon
If you have enough models, spam autocannons as possible
PCS you can put in CHimera with metlas and use them as usual vets or give them some anti-charge weapons
Cover all platoon with Aegis+Quadgun
Good idea is to put some Colossus in meat shield and blowup enemies who is trying to avoid platoon LOS

If you are going to be taking creed make use of his ability to outflank anything (yes even an imperator titan, why? Because he's CREEEEEEEED!) so take possibly a banewolf or a leman russ demolisher (or three) and outflank it right into the mess of your enemies juicy and squishy stuff that he left in the back for support exe. A manticore is having a ball pew pewing missiles from the corner of his board when all of a sudden... UH OH! The demolisher round goes flying straight into the side of it obliterating it from existence

Like most new players, you've sort of made the mistake of spending lots and lots of points on upgrades, while simultaneously not enough points on the RIGHT upgrades. The right upgrades, almost without exception, are weapon upgrades. Furthermore, they're weapon upgrades that you'll actually use. If you took those points you spent on meltabombs, medics, and vox casters (and, to a lesser extent, those vet doctrines), and spent them on more guns, you'd likely be better off.
Likewise, you've made another very common new player mistake, and chosen weapon upgrades which are low in strength, and high in Ap. Really, you want the opposite, as, let's be honest, you get what you pay for. Instead of bringing heavy bolters, bring lascannons. Instead of bringing flamers, bring meltaguns. You already have lasguns on infantry and free heavy bolters on vehicles. You don't need to spend more points to get anti-light infantry, and if you WANT to spend more points on that, that's what hellhounds and eradicators and colossuses are for.
Finally, and you wouldn't be expected to know this, yet, but GW released an FAQ that changed lumbering behemoth to "heavy" class of vehicle. This means that you can fire everything on the move, but you can no longer fire ordnance weapons and still fire the other guns at full-BS.
So, if we apply these principles to what you've already given us, your list would look something more like...
CCS - standard, 4x plasma guns
PCS - 4x melta guns
PIS - lascannon, melta gun
PIS - lascannon, melta gun
Vets - lascannon, 3x melta guns, grenadiers
Vets - lascannon, 3x melta guns, grenadiers
Vets - lascannon, 3x melta guns, grenadiers
Leman Russ Eradicator - hull lascannon, sponson multimeltas
Leman Russ Executioner - hull lascannon, sponson plasma cannons
Leman Russ Vanquisher - hull lascannon, sponson plasma cannons
... for roughly the same number of points.
As you can see, almost all the points are spent on weapons upgrades, and the weapons being brought are of high quality.
