Basically what it says in the title. If I were to try to make a model (that hasn't already been made by GW) entirely out of green stuff, would it work? Would it be durable?

It's certainly possible... although green stuff is intended more for master sculpting, rather than use for gaming miniatures in its own right.
So long as you have an armature inside the model for strength, though, it should be fine. GS sets to a slightly rubbery, plasticy consistency, and is quite durable.

There are better materials (designed for sculpting minis) but yes. Green stuff is bit flexible when cured, and this is not always good for gaming minis (if they bend, the paint can crack) etc. Some mix it with milliput, other use procreate (its supposedly really good stuff).
Use the material you like to work with....
It takes a bit of sculpting skill, but I have seen a few vids here and there on getting into sculpting minis (do a youtube or google search - you will find dozens and dozens of guides).
if you have the 3d design talent, 3d printing is also an option, although services that have high end quality (lets not turn this into "I saw this 3d printer on kickstarter for $100!" thread) are a bit pricey, but they are commonly used for masters for later reproduction.

Aside from their weapons, these guys are 100 precent green stuff. I wanted bigger meganobz, as the ones GW makes were too small for my taste. Made one master, and made molds out of the pieces since I dident have enough parts to bash up 6 meganobz. used instamold, wonderful product. But I used 25 bucks in greenstuff for the equivalent of 6 centurion sized models. I probably wouldn't do it again, as the only thing that saved them from being garbage is lots of cleanup, painting as well as I could to hide minor flaws, and the fact that ork stuff is supposed to look junkey.

Yes you can make models entirely of green stuff, games workshop has even been know to use players sculpting at the early stages when the game was designed, but they even have been known to use players ideas in future sculptings.
1: if you plan on sculpting your own get 14gauge aluminum wire for an idea of how you want the model to be posed
2: put a base green stuff base down on the wire
3: then move down to a 16 gauge wire to give design and more of a a definition, foot positioning, gauntlet claws ( power fist or something), a tail
4: green stuff the wire with a base.
5: plasta-card armor plates unless you want to green stuff those too.
6: if you don't want to do step 5, then move to a smaller wire gauge like 18/20 and you can clip and glue sections of wire to give armor plates definition, it will also give you ability to give definition arms, muscles, fingers, a hair style, helmet definition, horns, spikes, claws, a cape, chains.
7: once you have all of step 6 in place, you can green stuff the wire and then you have an excellent model base structure. The rest is all up to your creative mind.
