Wish I could but it's really hard to judge what a 500 pts list would need. Typically the best skaven stuff is the rare choices (except the plagueclaw catapults which suck balls) but you won't have much to field them. Like the most you could probably field in a 500 pts list is one warp lightning cannon but they are really good.
Core is usually alright but to be a jerk you may as well use skavenslaves (which are really good for their value). Take skavenslaves with no equipment except maybe a musician if you have a general or something nearby.
Weapons teams are alright (except the doom flayer which also sucks). I'd tell you to take them but sadly without something to back your units up they fall pretty hard. One strategy I have is to throw small slave units at the enemy and fall back fairly close to my army. I then throw the enemy out of position and usually have a good warpfire thrower shot at them. Warpfire throwers can be pretty sick.
Sorry I just don't play 500 pts battles much. I suppose on the bright side if you face cavalry or monstrous infantry you won't fight too many.
You should probably want a bit of melee hitting power so without the ability to field an abomination yet you might want to throw some rat ogres or even some plague censers into the mix. Remember they are frenzied so you may want a little shooting or a
BSB to hold them back.
Giant rats are probably more cost effective than 20 model slave blocks for chaff (unit re-direction and artillery killing shenanigans) though you might not need much except to force the enemy to run around and get out of position or slowly go forward.
You may need some poisoned wind mortars too for possible cavalry killing though that might not help enough. If you face cavalry it's more important to deploy on an extended front and then to find a way to flank the cavalry once they're done charging.
It's probably likely that you'll face some light cavalry which may need ratling guns to deal with.
Once again it's just so hard to think up a good list for you but i'll try if I have the time.

Btw I couldn't help but notice you're also in Michigan. Are you anywhere near Pontiac? The most local stores I've gone to are 'Pop, Caffeine and gaming' and the last
GW left in Michigan.
