The goal of this list is to simply overwhelm the enemy with what amounts to a fast, tough formation of Orks cruising down the center of the board.

The two 10-Man squads hold backfield objectives, while the Warbikers form a juicy center surrounded by almost 70 boys inside 2 Battlewagons and a Lord of War. The Battle Fortress has 30 transport capacity and is open topped, and will roll forward firing its weapons, ramming with a +1 to its Thunderblits, and causing mayhem. The boys and bikers, meanwhile, keep the 4+ KFF mek safe until the tanks hit the enemy, and then join the boys in what will likely be an army-wide assault. (WAAAAGH! anyone?)

With the Killsaw, Warboss, and Bikers I can now split up both HQs and run them into tanks, if need be. With a buttload of S10 AP2 from the Warboss, and a lot of S8 AP2 Armorbane from the Mek, I can pretty reliably pop two tanks unless they're Land Raider level tough. (Even then I give it even odds.)
The Grots don't have a lot of staying power, but I'll try to go to ground and keep them alive as long as possible. (Besides, if the enemy is shooting at them, they're shooting at the wrong enemies.)

Plus, the Battle Fortress still functions as a massive gun battery. It causes quite a bit of damage, and is a big fire magnet.

If you are just using 10 man squads of slugga boys to hold objectives in the back, why not use gretchen and use the points elsewhere?

Mainly for staying power. Mode rule, +1 Toughness, and something resembling a damage output.

On a side-note, I counted up points wrong. I overcharged myself by 5 points on both battlewagons and the Lukky Stikk.

If I swap out the Boys for Grots, I have 65 points left.
Do you think I should buy a Killsaw for my Mek, Boarding Planks for both wagons, and a Bosspole on my large boys nob?

You definately need a couple more upgrades for those wagons. Maybe boarding planks and grot riggers.

For the guy who leaves it all on the field (because he doesn't pick up after the game).

I'm also considering getting Reinforced Rams for the Battlewagons, though I don't know where I'd shave points. Any tips?

I don't know about Grot Riggers. I just need them to make it to the enemy, they can screw around after that, they don't matter as much.
Are Kannons useable? Maybe give them more punch after they drop of their Kargo.

boarding planks and reinforced rams on the wagons, and yes to the killsaw meks. shave a couple of bikes off to make space... 10 bikes is still awesome (+the warboss, Bigmek and painboy of course)
