Depends on the rest of the scheme; I use Agrax Earthshade to give them a more worn appearance. Nuln Oil is a reliable choice, or you can try Drakenhof Nightshade or watered down Fenrisian Grey for a cleaner and less stark shade.
All of those shades work best if the helmets are not pure white. Paint them up to Ulthuan Grey, and then do your shading, and the result will be a lot better; this also allows you to highlight the helmet with White Scar.

Here's how I paint my white:
Start with light grey like administratum grey.
Next leaving that into darkest recess use VERY light grey(Ulthuan grey is mine) to cover most of it. THIS is actually the base colour. Previous grey is the shading.
Finally highlight with pure white.
So in fact for white the pure white is only used for sharpest point and most of the area is painted in grey. But it still looks like white.
Once I was taught this I have liked painting white.
To properly shade white, use the Kevin Dallimore system which is as follows:
1. Undercoat dark grey
2. Paint light grey
3. Paint white leaving the greys in the appropriate crevices.
