Movie-wise. The goblins enslaved the trolls from the looks of it.
Book-wise, there were not really much mention of a cave troll except that they spotted one in the back of the bunch. (I swear that when I read that chapter the other week that the fellowship never even fought the bloody thing and instead fought Mordor Uruk-Hai.)
Video Game-wise. The Third Age
RPG had all sorts of different trolls in Moria, but none of them had any sort of title beyond the generic jobs for trolls (ie: Drummer)
The Hill-Troll Chieftain is a named hero for cave trolls I believe, and then you have the three trolls, and then the unnamed chieftain trolls. I believe the intelligence of the trolls was in an ascending order respectively.
