Can you include fantasy as well? I know 2 girls who play fantasy, 1 lady who plays 40k, a girl who used to sorta play space marines (mostly just painted) and one girl who wants to get into the game, drawn in by my copy of space hulk and a daemons vs. necron game shortly after. So if I know this many, there has to be at least a double digit amount. 'Course, I work in a game store, so I see more female players than casual players do

Reality is a nice place to visit, but I'd hate to live there.

I am fairly certain Melissa(another poster here on Dakka) is a Girl.
I know a Girl in Colorado(name of Merr) who at least used to play noise marines. (Her boyfriend, an old friend of mine from high school, played death guard)

My Brothers Girlfriend plays, though he hates the hobby. And whenever it is brought up in conversation I get to use the "I have won +1 internets" face. And I know of at least 5 girls on Dakka (Melissa, Lunahound, Morgrim, Mistress of Mini's, and Nosferatu).

Your math is off.
If you play with six other people, that's seven people in the group, one of whom is female. So one female to six males. 1:6. If there's a second female joining, then that's one more female, but zero more males. 2:6, simplified as 1:3.
Unless you're female? If so, then it's 2:5 or 3:5.
Now if you're talking fractions, not ratios, then it's 1/7 or 1/4.

We have a local daemon player, but she mainly plays fantasy, but she wants to play more 40k now that she has new dp models to play with in coming weeks.

A friend of my fiancee's plays, although infrequently, and is in fact a girl. She plays Sisters. Although I am starting to think that "Women who play 40k will invariably own either a Sisters of Battle or an Eldar army" should go into Jimsolo's Book of Immutable Facts. (Right after "While all men who own a Cher or Madonna CD are not gay, all gay men own at least one Cher or Madonna CD.")

Actually, out of the three women I personally know who play 40k, one plays IG, one plays Necrons, and one plays DE.

I was actually curious about this myself since I am a girl. My bf (who reads the forums but won't post) introduced me to 40k and we paint Orks together. I only did it at first because I missed doing stuff with him (we used to play an mmo together) but then I found out I actually liked it. So far when we have visted either GW or the local store I've stuck pretty close to him - but I think I'll eventually be comfortable at our local store because one of the employees is a woman so I won't be the only one... I just hope to find enough "mature" players to play 40k with in the future because if being a chick doesn't make me feel awkward enough the fact that I'm in my late 20s will make me feel ancient if I am surrounded by really young players.

This is a problem I run into from time to time, but for a different reason - I goddamn hate kids. So I'm right there with ya. The upside is that 40k is a more "adult" tabletop game than some alternatives - the downside is that it's currently the most popular (therefore has the highest young population).
Of course, there's nothing worse than trying to conduct a civilized game of 40k while there are 20 screaming children (and manchildren) five feet to your left playing Yu-Gi-Oh.
What you may ultimately find is that it doesn't particularly matter that you're one woman among twenty men, simply because many players are mature enough for gender to not even be an issue.
Naturally, though, there are exceptions...
