I know i will sound like a complete noob when i post this but i am thinking of putting down the codex for necrons and starting a tau army...
I was wondering what is a 500-1000 pts army to start with will be good...
After collecting necrons for a few years, i wanted an army that has some more customisation
Any help will be appreciated

As a Tau player, let me offer you some sage advice:

Moving from Necron to Tau is like giving up turds in exchange for crap. Competitively speaking, we're both at the very bottom of the barrel.

If you want customization, go with Ork. Nobs can do crazy customization (as much as suits) for the same results, and the army is more competitive. Also, they're more fun!

If you're set on Tau, then buy a battleforce, pick up say..2 broadside suits, and as you expand, do it with suits.

I started with Tau, and have probably 7,000 points worth of Tau. My wife plays Orks. They're mostly pink, light blue, various shades of pastel...

Despite all this, I like playing with her orks a lot more than with my tau.

whats there to laugh about, orks rock no matter what colour, but i have been flicking through the tau codex and they look pretty good at shooting.

Tau are fun to play with.

No, they are not the most competetive army, but they can win against pretty much anything. Kill point rules hurt you (drones), so be aware of how that can change things for you vs. KP friendly armies.

One thing that does seem sort of universally agreed upon is that your fire warriors are better off in transports, so you'll probably want to buy a second devilfish if you're buying the battleforce.

Budda Tau are cooler than necrons but necrons are more old school.

If you want customization with a semi-competitive army go to Tyriands, but tau are fun to play and can shoot really well.
And the manta is not worth the money, but it does look cool

Be prepared for a steep, but eventually rewarding learning curve. Learning how to play Tau is like learning how to pass an egg on the ice with a hockey stick. It only happens in Mighty Ducks movies, and even then only with a montage.

All jokes aside, Tau are fun. Experiment with them. I never take the same army twice. You'll have to find your style, but remember that Firewarriors are quite a bit more squishy than Necron Warriors...

The Battleforce gives you a decent 500 list minus change. For expansion....

1) Rail guns.
Obtain a hammerhead or a pair of broadsides asap for anti-tank.

2) More XV8's
You get one suit in the battleforce. You'll want more. These guys are the bread and butter of any tau force.

3) Troops.
Grab some more firewarriors/devilfish or expand your kroot. In 5th ed, large kroot squads (with max hounds) seems the way to go, but to each their own.
