Unfortunately, I only have a single rhino available. Are the Thousand Sons worth it, and should the squad sizes be reversed with the Plague Marines? Would a foot slogging Plague Marine unit with plasma work better? My other concern is the number of models. Are three Oblits too many for a 1000pts? Any help is appreciated.

I'd say the Tsons aren't really worth it. Besides the AP 3 never being used because of the prevalence of cover, in small squads the sorcerer is a points sink and their bolter fire won't do as well because it lacks mass. I ran 6 oblits in my FLGS tournament, but I had small squads of Noise Marines and a large CSM squad backing them up. Regardless, run the oblits in seperate units.

IMO, I would get rid of the Oblits and take Chosen in a Rhino with meltaguns. They are a much more effective AT unit (and add shock value, which forces your opponent to adapt/change his battle plan).

I'd drop the Thousand Sons and take some Berzerkers for some close combat action. Give em a PF as well and you're set.

If you could squeeze some points out of that to give your DP Warptime... do that. It's fantastic.

Also, if you can take a unit of 5 Daemons... they are good for securing/contesting objectives or tying up enemy heavy weapon units or even just supporting your Berzerkers (should you choose to take them).
