I haven't done many vehicles and have weathered absolutely none at this point. So I find my valkyrie to be somewhat bland at this point, particularly the engines. I have no clue as to exactly which parts of the engines should be weathered or exactly how much. I'm not asking for someone to hold my hand and tell me exactly what should be done, just a general direction would be nice from some of you that have a few years experience doing this. Thanks!

Flyers don't get the same amount of grime on them as tanks as obviously they are flying over the mud. What you can do to weather the flier would be giving it a thorough thin was with dark or mid brown to get the different colors to blend in together more.
The engines could use some red brown/ yellow/ purple washes representing oil and heat coloring.
Some chips could be added to the areas where people are walking/ climbing in. These can be done with dark brown or gray using a part of foam from blister to dab on.
And some mud could be added to the bottom of the hull which sits close to the ground when the skimmer lands.

if you like the bullet hole effect remember the Flyers are travaling faster then anything on the feild.
drill you standard deapth bullet hole. then use the side of your drill to make a long V shape trailing behind the hole. its a great effect and simple
as for the rest a little rust dry brushing on the wing tips and around the engine parts is all a flyer realy needs.
but i think what you have done already is pritty cool

For mud I drybrush:
Scorched brown, beastial brown, Gaveyard earth and finally bleeched bone.
For heat coloring on exhuast pipes and so on I use:
Black wash, boltgun metal and hightlight with codex grey.
Rust is easy:
Basecoat metal
black wash
metal brybrush
50/50 mixture of blazing organge and snakebite leather + much, much water (home made wash).
Finally metal hightlight to remove "too much organge"

I can't tell if you have already but give any exposed metallic silver a coat of black wash. This gives it a much more realistic metal finish.
Also, the wash advise mentioned above is very sound. But to take it one step further, try using a black pigment as the last step after the washes. This will give a realistic soot effect as washes can be a little shiney.
If you're feeling really adventurous, try painting on some splattified bugs on the windows.

For weathering, just think of the bits that are moving the fastest. On an aircraft that would be the engine cowling at the front and maybe the turbine blades. Also think about the kind of damage that would be done to the paintwork of the tail caused by the jetwash. Another good area to think of weathering is the leading edges of wings and aerofoil surfaces.

Streaks! Ever looked out the window of a airliner? You can see the black and gray streaks caused by rain and such. Every type of dirt and grime that hits a plane/jet streaks toward the rear as it flies. Same goes for any corrosion from rivets or bolts (usually white as planes are mostly aluminum. Just be consistent with the direction.

My suggestion for some quick weathering guides to the Valk is to check out this webpage:

This is a seriously nice Valk, and it is weathered w\o being a rust-bucket. Also, you should check out military modeling websites. There are many that have step by step breakdowns on how to weather AFV so that they look like they have been through the ringer.
Only do a few of the techniques that you like and are comfortable with at first. Part of weathering a vehicle is knowing when to say “when”.
